Taco Tuesday...again..

It's Shoofly Pie Tuesday for me... 🥧 went to the bakery this morning to grab one... saw dozens of robins at the marina, and another snowfall missed us. All is well. :giggle: As for tacos, we have them about once a month... if that. We like them, but there are so many old and new recipes to try that I don't often rotate the same things for a while.

What is a Shoofly pie? I think I read it was some sort of custard pie, really sweet, and they put a little plastic fly on it for decoration. Is that it. The tacos, I am the only one here so I can have them anytime I want and no one is bothered LOL!! When you live alone a lot of the joy of cooking is lost when there is no one to tell you if it is good or not.

Not custard, no... it's sweet from molasses and that's what makes it so good. :) The crumbs are nice on top... the molasses part is called "wet bottom" in the version I like. I've been eating it my whole life and never heard of anyone ever putting a plastic fly on it but I can believe someone at some time used that as a gimmick. :) @Blessed

Love those... but it's been so long. 🌮 What kind of fish do you use? And the ones I used to make have slaw on them (maybe they all do?) but I never liked the recipe for that and my regular slaw doesn't seem as if it would go well. What else do you put on them? Do I ask too many questions? 🤭 @Nathan
We had lunch at Downtown Burgers, tried their fish tacos for the first time. The tacos had breaded fish, some lettuce and onion with a blop of ranch dressing, on a single corn tortilla. Came with salsa, I chose the spicy. Good salsa, not sure how it was made(but I'll find out).
I enjoyed the fish tacos, would have preferred grilled fish, rather than breaded, but overall was enjoyable.

No Tuesday tuna tacos 🌮

How about Beefy Taco Joes?

Cook Ground Beef, add/stir in can of Tomato 🍅 soup and chunky salsa..
Spoon onto hamburger buns, top with shredded cheese.

Based on my winters in Baja MX, in the mid-atlantic I would choose fluke or flounder, or if available, mahi - which is the Baja staple for fish tacos. The "slaw" is just mayo and cabbage. Typically some chopped white onion w chopped cilantro, and avocado blended smooth(not full on guac) w mayo are the normal toppings, along w the "slaw."
 
Carnitas tostadas here tonight. The crispy tostada shells are sold right by the tortillas. I buy refrigerated carnitas in the deli section that only take six minutes on the stovetop to crisp them up. Put some refried black beans on the shell,add the carnitas,shredded cheese,salsa,sour cream,guac. Yummy and easy!
 
It was tuna Tuesday in my house today. I do have a couple taco shells in the freezer so I could have made tuna tacos, but I blew it! Maybe next Tuesday.
