Getting a little tired of tacos so tonight we`re having Easy Tex Mex Tamale Skillet. It calls for a can of beef tamales-which I haven`t had since I was a kid. They say don`t knock it til you`ve tried it so I am.

Not a fan of Tacos but do enjoy a Taco salad.
Taco salad is something our oldest son showed us how to make
Base is a handful Lays corn chips
next is some shredded lettuce, thin sliced onion, cubed tomato.
on top of that is coarse ground pork cooked with store bought Taco seasoning.
next to last is shredded sharp cheddar cheese. Last is store bought Taco sauce.
Quantity of each ingredient is subject to how it looks balance against the other ingredients. We use about a pound & half of coarse ground pork. Always some of all the ingredients left over to have a second helping later in the day.

I soft fry my flour tortillas in butter.
Either roll 'em up like a burrito, or fold like a taco.
But I don't mind a hard shell from Taco Bell once in a while.

I like hard shell, corn tortillas, but baked in the oven after filling them. Bake close together and they are easier to eat. The corn flavor adds something.
Flour tortillas are ok, too.

Tacos el pastor are made with pork.how 'bout...BBQ Pork...for something different?
