I have always struggled with meatloaf, advice please

After reading all these ideas and recipes I realized I’ve tried a variation of most of these. My conclusion, I don’t really like meatloaf.

The one hint I haven’t tried is Bella’s note about gelatin. About a month ago I tossed almost a full box of those individual packets. I couldn’t think of any use for them.
Mix with gas, you get napalm!
 
My mother's basic meatloaf > hamburger, oatmeal, ketchup, egg, salt, pepper, etc. Is good, and easy to make, but if you want more flavor try using 2/3 ground beef and I/3 ground sausage meat.

Peppermint Patty's recipe link looks good to me, but I don't understand the "extra lean" thing. The flavor's in the fat! I use 80% for cooking meatloaf and macaroni/beef/cheese casserole

Must be an Ohio thing, as I'm from there.
I always used Quaker Oats (a couple cups) instead of bread crumbs, along with ground beef, ground pork and ground veal.... needed all three of those for the flavor I was going for -- then a few eggs, catsup, onion, seasoning.

It was always firm, but never dry, and easy to slice after about 1 1/2 hrs. in the oven.
 
I love making meatloaf. Any ingredients will do, 500g beef mince, 1 large, diced onion, 1 cup grated parsnip,(carrot if no parsnip), minced garlic to taste, 1 beaten lightly whisked egg, salt and pepper, 1 1/2 cups fresh breadcrumbs, 1/2 cup plum sauce instead of tom sauce,
Mix all together, cook 180C, until cooked. Allow to rest 15 minutes out of oven.
Glaze - 1/4cup plum sauce, mix together 2tbs barbecue sauce and 1tbs French mustard, add to plum sauce, spread over meatloaf before cooking.
 
My brother's wife puts shredded zucchini in her meatloaf, it comes out so moist.

I just buy my turkey meatloaf at Trader Joe's. :)
I've given up on trying to make it.
 
I just can't seem to do this right. I have gone round and round of different things and still I have not found the perfect meatloaf. I have tried many added things for flavor and stability. That would include milk soaked bread, oatmeal, crackers, bread crumbs. I have added eggs, ketchup, Worcestershire sauce, tomato paste. Also sauteed onions, garlic and green bell peppers, Don't get me wrong it is edible but I want something so good it is worthy of a meatloaf sandwich. I have not been able to get to that point. Who can help?
I've got only one way we all like it. I use old fashion oats instead of crackers or bread crumbs as the filler
I use 1 egg to help hold it together. I use Heinz 57 sauce (or you can mix steak sauce with ketchup if the spice is too much) and finely chopped onions. Mix. Top with steak sauce/ketchup to glaze. Bake until knife or toothpick comes out clean.

I also have recipes for cheese burger meatloaf, but they havent been as successful. IMO
