Just had baked beans on toast...delicious... and before anyone gives a
look lol... our Baked Beans in the UK are very different to those in the US 
Mutton pies are not to everyone's taste but I've yet to meet a Scot who doesn't like them...Homemade chili for lunch. I thinking of having broccoli salad for dinner. I steam the broccoli in the microwave, add chopped egg, pickled beets and croutons. I make my own Russian dressing.

@hollydolly & @Kadee Decades ago, one of my colleagues discovered a place in town that sold mutton pies. Periodically we'd put in our order for them. I must've liked them because I believe I had it more than once.
I’ve never tried them and I’m sure they would be available somewhere ,our small local supermarket sells pies in the deli department I’ll look next time but I think they may be pork piesHomemade chili for lunch. We have a fairly large population of residents who either came from Cornwall UK or are decedents of ( including myself ) whose great grandparents came here from Cornwall in 1890 , I do know the exact place as it’s on my ancestry page .
The area is famous for Cornish pasties.
however I’ve never been developed a taste for any pasty types of foods ,I will occasionally buy a pasty and I eat the
meat / veg but not the pasty @OneEyedDiva

I've never heard of Hash Brown Onion rings... how does that work ?... I don't like Hash Browns..It’s bacon and hash brown onion rings in a crusty roll……and I have strawberry cheesecake for dessert.

The magic of an instant pot. 1:1 ratio of brown rice to water, 20 minutes cooking time. Comes out perfectly al dente, never soggy and no burnt or stuck-to-the-pot bits.Do you use water to cook your brown rice, or some kind of stock?
I've been using water, but I think I'll try it with chicken broth, for added flavor.
Mutton pies are made in Scotland, from hot water pastry using lamb..(mutton)...
I haven't tried it.. but co-incidentally, in the supermarket this morning, I was looking at the Jewish selection ( I love gefilte fish balls but can't have them while I'm on my diet... .. and nearly bought Latkes, just to try, and then didn't...Have you tried latkes?
Grate a potato into a bowl,
grate in some onions,
scramble in an egg. Add anything else you want.
In a skillet on medium flame, pour in a tablespoon of oil.
Add the potato-onion-egg mix to the HOT skillet, and shape the mix into a thin pancake (crepe).
Fry until crisp, turn, and
fry until crisp. Yum. KInda like an omelet.
lol...they sell a LOT of junk in Iceland.. I rarely ever shop there TBH ( I prefer Farmfoods for frozen food) ... so I wouldn't have seen them...how do they make them is it mashed onions and potato.? or what it it ?They sell them in Iceland……
Latkes are so delicious! Back in my 20s, a dear friend/roommate, would made these sometimes. We shared holidays - she'd come to my family for Christmas and Easter, I'd go to hers for Hanukkah and Passover.Have you tried latkes?

Yours looks like an easy recipe. Wonder how it would turn out with a flax seed egg? Think I'll give it a go and report back. Thanks for the idea!
