What's for dinner ( or lunch )

Just had baked beans on toast...delicious... and before anyone gives a :sick: look lol... our Baked Beans in the UK are very different to those in the US :D
 

Individual special lasagna with different meat, two sauces, mushrooms and cheese galore. Garlic toasts to accompany, might splurge for wee bottle of vino!
 
I have never bought a cake mix before... and a few months ago I thought I would try one and bough a Lemon drizzle cake mix...

I forgot all about it, not being used to having them, and today I spotted it in the cupboard and pulled it out... it's use by date was May 2023.. and I thought, well I could still make this, it'll be fine .. then I realised I don't have a mixer any more which is needed.. so because it was past it's sell by date .. no Food banks will take it, so I had no option but to throw it out. What a waste.. :( I won't buy another box cake mix
 

Homemade chili for lunch. I thinking of having broccoli salad for dinner. I steam the broccoli in the microwave, add chopped egg, pickled beets and croutons. I make my own Russian dressing.

@hollydolly & @Kadee Decades ago, one of my colleagues discovered a place in town that sold mutton pies. Periodically we'd put in our order for them. I must've liked them because I believe I had it more than once.

@hollydolly & @Kadee Decades ago, one of my colleagues discovered a place in town that sold mutton pies. Periodically we'd put in our order for them. I must've liked them because I believe I had it more than once.
Mutton pies are not to everyone's taste but I've yet to meet a Scot who doesn't like them...(y)

I’ve never tried them and I’m sure they would be available somewhere ,our small local supermarket sells pies in the deli department I’ll look next time but I think they may be pork pies 🥧 .
We have a fairly large population of residents who either came from Cornwall UK or are decedents of ( including myself ) whose great grandparents came here from Cornwall in 1890 , I do know the exact place as it’s on my ancestry page .

The area is famous for Cornish pasties.
however I’ve never been developed a taste for any pasty types of foods ,I will occasionally buy a pasty and I eat the
meat / veg but not the pasty @OneEyedDiva

Am working on shedding the last pound of my vacay gain, so still laying low. Brown rice, oats, vegetables, salads, fruit, tofu, some nuts. That kind of thing
Do you use water to cook your brown rice, or some kind of stock?
I've been using water, but I think I'll try it with chicken broth, for added flavor.

Grate a potato into a bowl,
grate in some onions,
scramble in an egg. Add anything else you want.
In a skillet on medium flame, pour in a tablespoon of oil.
Add the potato-onion-egg mix to the HOT skillet, and shape the mix into a thin pancake (crepe).
Fry until crisp, turn, and
fry until crisp. Yum. KInda like an omelet.

The magic of an instant pot. 1:1 ratio of brown rice to water, 20 minutes cooking time. Comes out perfectly al dente, never soggy and no burnt or stuck-to-the-pot bits.

I usually batch cook 2-3 cups of dry rice. A cup of cooked rice fits nicely in a plastic sandwich bag, then I flatten the bags, put them in a container that's marked "BROWN RICE" and freeze. Easy overnight thaw in the fridge or last minute heat in the microwave. It's as good as freshly made, is always on hand and the IP only needs to be run - and cleaned - once.

No broth because I rarely have specific menu plans for the rice, and sometimes eat it as a sweet snack (nuke 1/2 cup or so with a little fruit juice and some cut up fresh or frozen fruit).

DH can take or leave rice - mostly leave it - but I like it.

p.s. The ricotta container saves freezer hunting time, and gives fair warning when the last bag is used. Not being an organized person by nature, little helpers like these save the day. Costco size plastic sour cream, cottage cheese and ricotta containers are perfect for wrangling small bits in the freezer.
 
Mutton pies are made in Scotland, from hot water pastry using lamb..(mutton)...

Pork pies are a completely different thing and come from the North of England called Melton Mowbray ..and are made entirely from Pork ...

I haven't tried it.. but co-incidentally, in the supermarket this morning, I was looking at the Jewish selection ( I love gefilte fish balls but can't have them while I'm on my diet... .. and nearly bought Latkes, just to try, and then didn't...

Your recipe sounds like Potato rosti... is it like those ?

Yours looks like an easy recipe. Wonder how it would turn out with a flax seed egg? Think I'll give it a go and report back. Thanks for the idea!
