What are you cooking or baking today?

The good breads at Trader Joe's and elsewhere have become so expensive. $4.50 and $5.00 a loaf. I've never been too good at baking yeast breads, but I have decided to start baking more of my own bread. Yes, I can buy the cheaper breads, but they are not very good. Once you get used to a meaty, whole grain bread you don't want any of that fluffy, additive-filled junk.

I have made this one before. It's good, very low fat, can be made Vegan if you use a plant milk. Mark Bittman's Whole-wheat Molasses Bread | Oregonian Recipes

I added a teas. of cinnamon, 1/2 c. of walnuts and 1/2 c. of raisins.
 

I was gifted an instant pot that also has an air fryer hood, but have never used it. Is it really worth the trouble?
I’ve got an instant pot also but use my Ninja air fryer for air frying. All I do is cut potatoes, add a tbsp. of olive oil and put them in for 20 minutes. It’s the simplest thing to use and is DEFINITELY worth it.

NINJA air fryer = very good. The battered fish was done one piece at a time in a mini fryer

I think you are going to love it. When I first heard of these air fryers, I thought it was a hokey idea. Then I read many posts made by people really using them and they showed pics of the food, which looked delicious AND cooked well so purchased one.

One thing you need to do which the manufacturer might not mention is to use a fan. You are best off putting this air fryer right underneath your stove and using the stove fan. The ninja unit has its own fans but I personally think it needs a bit extra.

Tell us what you think when you buy it Starsong. Your kids will probably love it too.
 
Tis the reason why I sold my bread maker. It’s far too easy to just make a sandwich everyday. I’m not disciplined enough to own one. Plus the meds I take increase my appetite
Speaking of bread makers...years ago when we traveled and lived in our 5th-wheel trailer, I used a bread machine all the time and it made beautiful loaves of bread. When it finally died, I bought another one but for some reason, it made terrible loaves of bread. I sent it back and told them (and sent pictures) that it never got hot enough to bake the bread or raise it properly. They replaced it and sent me another one, which wasn't any better so I quit using it and it lives in a closet pantry with all the other non-used small appliances. I think they'll all be going in a yard sale this Spring.

I've learned to make "rustic" bread (or do they call it "artistic"??) and use a cast iron skillet to bake it in. It's delicious and it doesn't take a lot of fussing around. :)

Now if I get a bread craving, I either make pancakes or waffles. and they are always gluten free. I’ve learned to make my own gluten free stuff. It’s FAR cheaper and much less expensive than store bought. I’ll make big flat pancakes for roll up sandwiches and waffles for when I’ve got a sweet tooth.

Dollar pancakes are a big hit with me when I’m having a sweet tooth like now. Lol

Her loaves made to spec for local distribution to the hungry. We keep 1 loaf every 2 weeks.

Today I have chicken thighs(bone in, skin off) marinading in plain yogurt w curry spices mixed in. Will cook on gas grill on top of pizza stone - my tandoori oven and then into a curry w coconut milk, cauliflower, potatoes, onions, mushroom, etc.

Lunch today, loading up on fresh batch of iron, so it's ox/beef heart for lunch with chips.

Dinner, it's an enjoyable Monday comfort food. "Eggrolls-In-A-Bowl"

All the normal ingredients you'd find in your normal Chinese Takeaway eggrolls. However, no wrapping and no deep frying. Healthy and oh so tasty. Got to run to corner shop for bag mix of coleslaw...
 
I'll tell you what I cooked yesterday since I'm not cooking today. I made a pot of soup: chicken quarter, brown rice, cut up carrots and cut up celery. I put the chicken and brown rice in a large pot and simmered them in water for 45 minutes. I added some salt but not a whole lot, garlic powder, onion powder, cayenne pepper, saltless spice from aldi's. After 45 minutes I added the carrots and celery and cooked for 15 minutes. Turned the heat off and let it sit about 20 minutes. Served it with saltine crackers in a big bowl--yum, it was good!
