How do you like your steaks?

How you like it!

Rare - Barely fried on the top and bottom, cold and blood red in the center, maybe even still moving a bit...

Med Rare - Fried and sealed top and bottom, warm in the center but still very red, very tender

Med - Well fried and sealed, hot center, very little red if any, tender but chewy...

Med Well - Well fried with some burning on edges, no red meat, chewy

Well - Browned with black around the edges, firm in the center, real chewy
 
Medium rare, but I've been losing my desire for meat. I've disliked hamburger more and more in the last 20 years, I recently bought three steaks, filet mignon and two sirloin tips, thinking this might spice up my diet. I was disappointed. The last filet I had before this was 6 years ago, and I enjoyed it. I'll try one at a restaurant sometime and see if it was just me.

I've noticed that steaks, along with other meats, are not tasting nearly as good as the same thing did some years ago (maybe decades ago?) In any case, perhaps that's why you were so disappointed. These days, seems you have to go to a butcher and spend a small fortune to get a great (aged) steak to get the type of flavor I remember from days gone by.
 
Medium-Well for me. Seems that the Medium of today was yesteryear's Medium-Rare? I used to always order Medium or even Medium-Rare.

Then again, the coffee I liked in my younger years was much more pale than what I like now.

This has been my speculation also. For hamburger, all the chains carry it pre packaged, probably from large meat companies that are maximizing profits by throwing in grizzle, bone chips, and maybe that that stuff called pink slime that created a big scandal a few years ago. For steaks, that would not be the case, so I wonder if my taste buds have changed or they are putting something in the feed to make them fatter, but with a side effect of less taste.... Like what's happened to today's tomatoes.
 
I seldom eat red meat, it is more convenient that way because my doesn’t. I’ve grown accustom to this lack carnovoreism, however, I eat pork, fish and poultry.
