What are you cooking or baking today?

Yesterday I made a Red Velvet cake. Why did I do this when I’ve never had a piece I liked? There was a special on a fancy brand and for some unknown reason I decided it was a good idea. Cake made and I still hate it. DH is happy to have some fresh dessert in the house. I made two rounds. The second made with walnuts was frozen. Hope it’s a little better.

Thought I was the only one who passes on red velvet cake. Had it once and thought it was very meh.

My take: It's basically a white cake with a little cocoa powder mixed in, plus enough red food coloring to give one the shivers (no doubt to mask the off-putting light brown color from the small amount of cocoa), then topped with a fairly standard cream cheese frosting.

I've never understood what all the fuss was about.
 
Pumpkin loaf today.

Yesterday I wasn’t sure what I was making. Decided to do a clean out of miscellaneous things in the fridge. Fried mushrooms, red peppers, onions with herbs. Added the cooked hamburger that I’d defrosted earlier. That was a mistake because I also decided to use up the heavy cream. Served over noodles. It was delicious but that cream sauce would have been much better over chicken. I don’t want to think about the calories.
 
I did a double batch of chili. Perfect day for it. 53 degrees and very light rain. I smoked all the vegies for a couple hours before adding the meat in. The kids and grand kids were supposed to come for dinner, but my wife came home from work this morning sick and we cancelled that plan. I will now freeze half of it for another day.

I'm glad it's cooled enough to use the stove top again. Seriously avoided even the stove top all summer except for oatmeal. I cooked everything else in the microwave. I don't like microwave oatmeal. I cook a small pot on the stove, about 4 servings and reheat it.

Yesterday I made a big pot of vegetable soup and today cooked some WINCO veggie patties on the cast iron skillet for work lunch.

Not sure when I can use the oven for baked potatoes and pizza.
