I made sheet pan enchiladas. Cut up some corn tortillas and spread on pan. Next, pre-cooked meat mixture, enchilada sauce all over, then cheese. 375° ten minutes.
I made a cold mixture of tomatoes, onion, avocado, and arugala for the top.
