I am talking about food that we can no longer eat for whatever reasons.

The foods that I miss most are

1. Mofongo

2. Papas Rellenas

3. Pasteless

4. Alacapurias

All these typically Puerto Rican foods, were available to me until approx. 14 years ago when the person who had been preparing them died. Had I known, I would have watched and learned how to make them myself. The only one that I have been able to replicate are pasteless with various degrees of success.

I am going to use the following videos to teach me as I should have done long ago. .

Can;t you watch a youtube video on how to make them ?
True! I should have done that long ago, I am now going to start. Why I waited so long is really beyond me. Maybe because I have never considered myself capable of really learning how regardless of how hard I might try. Strange! Also strange is the scarcity of restaurants in the mainland USA that feature these items.

Thanks. The only one I attempted was the pasteles. I had trouble finding the green plantains. The Amish refused to order them for me. Told me that they don't sell and I would need to order in bulk. So I was forced to go downtown and they sold me sweet ones instead of green as they were being advertised. .

Then I was recently told I have diabetes and started worrying about all the carbohydrates involved in eating all those plantains. But recently, I have decided to ignore that and just take my medications and eat whatever want. But I do miss those foods that I took so much for granted when someone else was preparing them for me.

I used to love hot dogs with mustard and relish when I was a kid. It's not that I can't eat one, I don't think, but I don't because there are healthier things for me to eat which are just as good. Sort of.

I also miss bugles which were a corn chip type snack loaded with trans fat but since they took the trans fat out of everything I haven't eaten a one. Crackers and chips without trans fat may be healthier but they taste like crap.

For really good pasteles a combination of green plantains & green bananas works best. Using a food processor to blend the combo into a smooth massa works great. Pork shoulder cubed small with a little fat for flavor for the filling is a must. Of course wrapping in banana leaves makes for authentic flavor. Were lucky here that the kind of ingredient's needed for all 4 of your food favorites are available.

Fat does seem to enhance a food's flavor significantly. I have been recently cooking pork chops and, of course, am forced to trim the fat. But the small amounts of fat that I (accidentally on purpose?) miss, are absolutely delicious.

Another food that I am forced to avoid is Candy Corn. I could literally consume bagfulls of those all day long were it not for the darned sugar!

When I was a kid I used to LOVE Kraft mac & Cheese...

I hadn't had it for decades as an adult, and one day I saw it and bought it....oh dear.. not how I remembered it at all....atses change don't they..?..as well as ingredients ...
Amy's still has a delicious mac and cheese that I like. Whole foods carries their line but so do other stores. Mac and cheese is a wonderful comfort food especially when it gets cold.

I know. I still add butter to some recipes even though it's no longer popular to do so. :)

At the holidays I miss the "date pudding" and also
the Baked Apples that my mother made, both were
delicious..!!
My mom made baked apples at this time of year and all winter long. Apples are always plentiful here. Her baked apples were wonderful but the sauce was a trifle sugary.

I don't know what Amy's is ... but I make my own Mac & Cheese now from scratch, and I add chopped bacon... and sometimes green veg...but yes I agree it's super food on a cold day. In fact I have it written on the kitchen blackboard to remind me to have it this week... :p

Amy's is just a brand of healthy precooked meals like soups and mac and cheese that you'd find in healthy choice food stores like Whole foods. If you've got time to make your own, go for it! It's always tastier IMO.

I make most of my own food from scratch..now I'm retired I certainly have the time...(y)

Then there was this sausage that they referred to as Salchichon. We consumed it with cheese and Italian Bread. That was tantamount to being in a gustatory heaven,. No worries about clogged veins or anything else back then. Now, if I eat a few slices, and happen to detect a slight flutter or twinge in the general area of upper torso, I start worrying about having provoked an imminent heart attack. Oh those halcyon days of fascinating carefree ignorance! May they somehow be restore hoard!

I liked those "no-bake cookies" made of oatmeal, cocoa, sugar, and peanut butter. Far too many carbs to touch them these days though.
That's my husband's favorite! I make them a lot, as well as rice krispie treats, he says mine are the very best. I use a little more butter and than the standard recipes call for. A trick I learned from Bobby Hill.

I love Amy's products, Walmart carries a few of their items.

I miss the homemade Banana ice cream that was made outside in a hand cranked ice cream maker with salt and ice chipped from a big block.
