What are you cooking or baking today?

I smoked some acorn squash and sausage today. It was supposed to be dinner today, but we got an invite to my sons for dinner and playtime with our 4 grandkids. No Brainer where we ate dinner so we will have these warmed up for tomorrow. I would skip dinner all day long to hold these babies.

Great pictures of both squash and babies. Are there 4 of them or is that two separate pictures?
 

DD & her family are coming for a bagel bar brunch later. She's bringing the bagels and cream cheese.

I'll provide smoked salmon and Nova lox, vegan cream cheese, butter/vegan butter, capers, sliced red onion, sliced cucumbers, sliced tomatoes and lettuce.

The meal will be about assembling rather than cooking.
Got raves from everyone. DD also brought grapes and sliced strawberries - perfect additions.

It was so easy to pull this together and simple for everyone to prepare their food that I'll repeat that menu for the dozen of us who'll be here Halloween evening. (DD's family won't be with us, though they'd be fine eating it again.)

I ordered two dozen bagels from Panera to pick up tomorrow (on their Tuesday special), will grab some gluten-free bagels from Sprouts for DS & DDIL who are vegan and GF. Romaine lettuce as wraps will work for the keto eaters.

DD & I are adding this to our list of menu choices when kicking around what to make for dinner when we get together (nearly every weekend).
 
Today I cooked some ham and potato soup.

Here’s the recipe if anyone wants to try it.

HAM/SPUD SOUP

1/8 cup butter
4 green onions chopped
1/2 cup diced celery
4 cups diced potatoes (about 5 average-sized potatoes)
2 cups chicken broth
1/4 tsp black pepper
2 cups milk
1 small onion, chopped
1/2 cup thinly sliced carrots
1 clove minced garlic (or 1/8 tsp garlic powder)
1 cup cubed ham (about 3/4 lb.)
1-1/2 tsp salt
1 tsp dried parsley (or 2 tsp fresh chopped parsley)
1/4 cup grated cheddar cheese

Put butter, regular onion, carrots, celery, and garlic into large saucepan and saute until 'till onion is soft and clear. Add green onions, potato, ham, chicken broth, salt, pepper, and parsley and bring to boil. Cover and simmer 'till vegetables are cooked, stirring occasionally. Stir in milk and heat through, without boiling (about 2-1/2 to 3 minutes). Garnish with grated cheese. Makes 4-5 cups

Made a large crockpot full of chilli. Served it with baked potatoes and my homemade vinegar-based coleslaw. Meringues for dessert. I have a few days worth of those.

Actually the potatoes weren’t baked. They were done in one of those quilted pouches designed for the microwave. I forgot I had it tucked away in the back of a drawer.
 
Yesterday I made a big pot of lentil soup of my own creation - been making it for years now because it's one of DH's favorite cold weather meals.

I saute chopped onions and garlic until softened, add curry powder, dry brown/green lentils, green enchilada sauce, chicken or vegetable broth. When the lentils are nearly done, add chopped carrots, celery and green beans. Hit it with a stick blender to mash up about 1/3 of it.

Serve hot over bowls of mixed power greens, which wilt immediately from the heat. Add a little lemon juice or parmesan cheese at the end.

It keeps several days in the fridge and also freezes well.
 
I do all the cooking, and housework here, last night I made dinner for nine, all my kids, and the grandkids eat here each thrusday, had six missing last night, we had spaghetti, with rolls, also made a carrot cake, and had icream, today my wife, and I had chicken soup, and crackers, out of a can, I needed a break.

Can I get the recipe for your coleslaw dressing. I just found out I have type 2 diabetes. I make my own but it has always been a mayo base. I need to change to something lighter. Thanks in advance!!

Just a quick comment: I don't have diabetes but rarely use full fat mayo anymore - Light mayo isn't perfect, but it's pretty good.

Here's the comparison of Best Foods/Hellman's offerings, (and also the brands I use: Walmart's Great Value and Aldi's brand).
Per Tbsp:
Light: 35 calories, 3.5 grams of fat, 1 gram of carbs, 0 sugars
Regular: 90 calories, 10 grams of fat, 0 carbs or sugars
