Today I cooked some ham and potato soup.
It was delicious.

HAM/SPUD SOUP
1/8 cup butter
4 green onions chopped
1/2 cup diced celery
4 cups diced potatoes (about 5 average-sized potatoes)
2 cups chicken broth
1/4 tsp black pepper
2 cups milk
1 small onion, chopped
1/2 cup thinly sliced carrots
1 clove minced garlic (or 1/8 tsp garlic powder)
1 cup cubed ham (about 3/4 lb.)
1-1/2 tsp salt
1 tsp dried parsley (or 2 tsp fresh chopped parsley)
1/4 cup grated cheddar cheese
Put butter, regular onion, carrots, celery, and garlic into large saucepan and saute until 'till onion is soft and clear. Add green onions, potato, ham, chicken broth, salt, pepper, and parsley and bring to boil. Cover and simmer 'till vegetables are cooked, stirring occasionally. Stir in milk and heat through, without boiling (about 2-1/2 to 3 minutes). Garnish with grated cheese. Makes 4-5 cups
