What are you cooking or baking today?

Just a quick comment: I don't have diabetes but rarely use full fat mayo anymore - Light mayo isn't perfect, but it's pretty good.

Here's the comparison of Best Foods/Hellman's offerings, (and also the brands I use: Walmart's Great Value and Aldi's brand).
Per Tbsp:
Light: 35 calories, 3.5 grams of fat, 1 gram of carbs, 0 sugars
Regular: 90 calories, 10 grams of fat, 0 carbs or sugars

Thanks Starsong, good to know!! I feel like I can manage the food portion of this but I am really going to have to find new ways to use condiments. Those seem to be trouble makers for diabetes.
 
I had pork loin. Made a veggie combo, roasted broccoli, asparagus and brussel sprouts. I have never been big on broccolli, but I ate it. I like brussel sprouts sometimes but mine turned out nasssssty. They sure need to be cooked with bacon. The dogs wouldn't even eat their bite.

I know I am crazy, but I give the pups bites of veggies for their health. With those sprouts they thought I was trying to poison them.

I will keep trying to find new ways to use them as well as the other veggies I am adding to my diet,
 
As of last night, my son has banned me from the kitchen today. He'll be making navy bean soup and quinoa and doesn't want me in the way. I told him that's fine with me. I hate to cook anyway, so will have easy fix meals. I'll steam broccoli in the microwave and make brcccoli salad again for dinner. Lunch will be a sandwich..PBnJ or cheese. I don't eat his bean soup until the day after it's made.
 
Used my recently-purchased Traeger grill/smoker to smoke two pork shoulders. First time to do this on the Traeger. I filled the hopper with hickory pellets and it used all of them throughout the 10-hour smoke, finishing about 3 AM. Fortunately, the shoulders were done when the smoker finished eating the pellets.

The Traeger is so much easier to deal with than my last smoker. Just set the temp and walk away. Had to fiddle with bulk charcoal, vents, and the huge water bowl inside the Weber Smoky Mountain smoker. PITA.

My dog Pepper approves. She got a bit of the pork for her breakfast this morning.

Today I cooked some ham and potato soup.
It was delicious.

Here’s the recipe if anyone wants to try it.
Note: this recipe was first offered me by @officerripley

HAM/SPUD SOUP

1/8 cup butter
4 green onions chopped
1/2 cup diced celery
4 cups diced potatoes (about 5 average-sized potatoes)
2 cups chicken broth
1/4 tsp black pepper
2 cups milk
1 small onion, chopped
1/2 cup thinly sliced carrots
1 clove minced garlic (or 1/8 tsp garlic powder)
1 cup cubed ham (about 3/4 lb.)
1-1/2 tsp salt
1 tsp dried parsley (or 2 tsp fresh chopped parsley)
1/4 cup grated cheddar cheese

Put butter, regular onion, carrots, celery, and garlic into large saucepan and saute until 'till onion is soft and clear. Add green onions, potato, ham, chicken broth, salt, pepper, and parsley and bring to boil. Cover and simmer 'till vegetables are cooked, stirring occasionally. Stir in milk and heat through, without boiling (about 2-1/2 to 3 minutes). Garnish with grated cheese. Makes 4-5 cups

Here is the recipe. I got it from @officerripley. My husband and I think this is the best soup ever. It’s a great recipe. It makes 4 to 5 cups of soup. We ate the entire batch in one day so I can’t tell you how well it keeps but ‘think’ it would keep well due to the preservatives in the ham. It doesn’t call for croutons. I just added them and highly suggest you do.

I need a lot of freezer space for the holiday season, so it's time to work on emptying my freezers rather than filling them. Easier said than done.

I rooted around and found some frozen Trader Joe's Pad Thai so threw it in with a bunch of fresh & frozen vegetables and greens and am eating about a third of it for breakfast. Pretty good, I must say. 😋 Didn't free up much freezer space but every little bit helps.
 
Today it was Amish oven fried chicken, mashed potatoes & fried corn with apple pie for dessert.
Can't believe the elaborate cooking done on a regular basis by so many here. Very impressive.

My food yesterday was typical of how I eat now:
Breakfast - BIG stir fry with fresh & frozen vegetables and some pad thai I found in the freezer.
Lunch - half a peanut butter and TJ pumpkin spread (instead of jelly) sandwich
Snack - mini bag of M & Ms and a mini Snickers from the leftover Halloween candy stash
Snack - a couple of handfuls of salt-free pretzels
Dinner - the last of the quinoa (about half a cup) with a couple of teaspoons of my mustard/mayo/vinegar concoction stirred in and about a cup of grapes.
