What's for dinner ( or lunch )

It's 8pm now and i still haven't decided what to have for dinner.. I have some smoked salmon with smoked salmon Mousse in the fridge.. but it's really just an appetiser... I could have chicken or mac & cheese with bacon.... not sure
 

I had Steamed Duck Bao buns for dinner this evening... followed by Raspeberry meringuge Roullade

I didn't have any Christmas lunch today.. I wasn't really in the mood to boil a big piece of gammon... so I just had yesterdays left overs of sausage, mash and peas...

I'm absolutely fine with that...there was only me here....(y)

I'll cook the gammon later in the week and then make Lentil and veg soup with it

Since you taught me about the air fryer, I cook everything I can in it. Tonight, a beef filet, takes maybe 10 minutes depending on the thickness I cut. It cooks much better in the air fryer than the cast iron pan or on the outdoor grill. I often throw some vegetables in there with the steak.

I also bought some lovely jumbo shrimp, Need to get those thawed and cooked. Got to make a cocktail sauce as well. I would like them fried with tarter sauce but that is a no no now.

Oh I know what you mean . I cook 80 % of my food in the AF now.... I;m pleased you're loving it..

Thanks for asking after Pixie. DD got her to eat something small today... and she took her out to see the King & Queen at their Christmas retreat at Sandringham.. truth.... DD said she took Pixie to walk in the most dense foliage in the Sandringham easte woods so she could have a nice time just sniffing, rather than running, because she can't afford for pixie to lose any more eight

Today I seemed to have been cooking for half of it...

I boiled a 2 pounds piece of gammon... for 2 hours, then with the stock I made soup of which I added lentils, potatoes, broccoli, rice noodles, and shredded gammon... ..that's all cooked now and all portioned up in soup containers and chilling down ready to go into the Freezers. I have half the gammon left, so I chopped that up into fist size pieces to freeze individually to put in various other dishes over the month.. more soup... or bacon and egg pie etc

Also for lunch I had Duck spring rolls with hoisin sauce ... and for dinner, I had jacket potato with Egg mayo.. and smoked salmon Mousse...

It's 5pm I'm just going to have early dinner.. I've defrosted some home made beef and veggies.. from the freezer... but I also have one tub of lentil, bacon, Noodle and veggie soup in the fridge that I cooked yesterday and froze in portions, so I could have either one..

Welp we've had out daughter and her boyfriend staying at the house for a few days. The pressure was on to make him feel wanted and loved - pretty sure he'll be our son-in-law by the fall of 2026.

Roast chicken w a Peruvian sauce, fried rice, and broccoli

Grilled chix thighs, twice baked potato, and salad

Christmas eve - Broiled AK black cod, aka sablefish w miso glaze, jasmine rice, stir-fried bok choy (yes I mixed a Japanese fish recipe, w a Chinese stir-fry.) My wife made an apple pie.

Christmas - lasagna and meatballs, asparagus, and salad

Boyfriend left, but the pressure was still on. It was our 32nd wedding anniversary last night.

Shrimp in white wine sauce, linguine, and broccoli.

Tonight - grilled swordfish, roast potatoes, salad, and green beans

I don't want to spoil your festivities, but I;m a little concerned at the large amount of Swordfish ... I'm sorry if I'm talking to someone who is very well aware, but jut in case you're not, swordfish is extremely high in Mercruy, and it's suggested it's never eaten, because it can cause dementia among many other poisonous things in the body....

I used to eat it a lot in Spain years ago .. because it was cheap.. then i discovered about the mercury, never eaten it since,

1. Do not eat shark, swordfish, king mackerel, or tilefish because they contain high levels of mercury.


2. For people who are pregnant or breastfeeding: eat up to 12 ounces (2 average meals) a week of a variety of fish and shellfish that are lower in mercury. For children from 1 to 11 years old: Eat up to 8 ounces.


  • Five of the most commonly eaten fish that are low in mercury are shrimp, canned light tuna, salmon, pollock, and catfish.
  • Another commonly eaten fish, albacore ("white") tuna, has more mercury than canned light tuna. When choosing your two meals of fish and shellfish, you may eat up to 4 ounces of albacore tuna per week if you are pregnant or breastfeeding.


3. Check local advisories about the safety of fish caught by family and friends in your local lakes, rivers, and coastal areas. If no advice is available, eat up to 6 ounces (one average meal) per week of fish you catch from local waters, but don't consume any other fish during that week.

I was under the impression that the larger the fish, the more mercury likely. If you already said that I missed it.
