Whats For Dinner/Supper ?

Mega salad as usual, now on day 2 of getting back on course:giggle:
DH had mashed potatoes and chicken skewers on the BQ; I picked them up for him in frozen section. We had never tried them, he said they were good so I tasted one. Way too much salt as usual for prepared ready to cook foods.

Next time I will simply buy boneless chicken thighs and breasts and marinade them in milk to make them tender and juicy, sprinkle a bit of plain poultry seasoning, with very little salt and freeze a bunch and save some $$ too. Holy cow, one skewer registered 520mg of salt!
 
I eat very light dinners. Last night I mixed 1/2 cup of Bob's Red Mill 5 Grain Rolled Hot Cereal mix with 1/2 cup of almond milk and nuked it for two minutes. Stirred in about 1/2 cup of (defrosted) frozen berries, some unsweetened applesauce and a strong dose of cinnamon. Healthy, delicious and just the right amount of food.
That sounds good.
 

In Texas they are a "dish" :ROFLMAO: Meaning Texans eat tater tots like they will never see another. They pile chili and then lots of grated cheddar cheese or spicy jack cheese on top and eat them for a whole meal. They also do that with Fritos corn chips: pile chili on top and cheese and that is a whole meal. Texans are great people.

Tater tots are another form of French fry; would be great with fish and replace your chips with tater tots. They come in "regular" and extra crispy. They are frozen solid as rocks and are baked in the oven.
I sometimes buy Monterey Jack cheese but not seen spicy Jack cheese in the shops, I think Fritos corn chips are like the tortilla chips we have here?

One summer, we met some Texan tourists who were trying to find their way around London and we told them about a local restaurant they might like. Later on we popped to the restaurant and they were there. They were great company. :)

Fritos are fried and fairly greasy. Perfect after midnight with some serious cheese/meat dip.
 
Boned out a pork shoulder and got it braising skin side up in the oven now for carnitas. I doubled the recipe since it's based on 3lbs, but did not chunk it as per the recipe so it'll take probably 50% longer to cook. I'll be ready for a few taco Tuesdays!

Tossed the bone in the backyard, hoping for an owl, coyote, or mtn lion to come by to sample. I delayed a bit before posting this, bone was gone w/in an hour, coyote tracks. Smells good too!

Carnitas recipe
 
Classic pork chops in air fryer, then deboned and cut into bites. Served as an open-faced sandwich on thick-sliced hearty brown bread smothered in a pork-tomato gravy. Roasted cubed potatoes, carrots, and onions. Simple salad of mixed greens and sliced mushrooms in a vinegar, garlic, and lime dressing.
 
Valentine's Day dinner was linguine with white wine, finely chopped fresh tomato, and garlic sauce finished w butter. After pan searing a dozen sea scallops (US northeast coast dry seas) in olive oil I placed them on top of the plated linguine. And with that some steamed spinach.

Placing the scallops on top preserved the crispyness, texture, and subtle taste rather than soaking them through by heating them in the macaroni and sauce as one would typically do w clams, mussels, or shrimp.

As for the "things I don't buy anymore thread" the scallops were about $7/lb cheaper than the last couple years so it was a real nice treat for both of us.
 
Turkey chili with beans, pan grilled broccoli and sugarless chocolate pudding cup.
I've been on a strict no sugar, low salt diet for about a month, experimenting with seasoning with different spices...need to get some numbers down..:(
