That sounds good.I eat very light dinners. Last night I mixed 1/2 cup of Bob's Red Mill 5 Grain Rolled Hot Cereal mix with 1/2 cup of almond milk and nuked it for two minutes. Stirred in about 1/2 cup of (defrosted) frozen berries, some unsweetened applesauce and a strong dose of cinnamon. Healthy, delicious and just the right amount of food.

I sometimes buy Monterey Jack cheese but not seen spicy Jack cheese in the shops, I think Fritos corn chips are like the tortilla chips we have here?In Texas they are a "dish"Meaning Texans eat tater tots like they will never see another. They pile chili and then lots of grated cheddar cheese or spicy jack cheese on top and eat them for a whole meal. They also do that with Fritos corn chips: pile chili on top and cheese and that is a whole meal. Texans are great people.
Tater tots are another form of French fry; would be great with fish and replace your chips with tater tots. They come in "regular" and extra crispy. They are frozen solid as rocks and are baked in the oven.

Have you considered smoking?The carnitas came out ok, but much prefer using the insta-pot, not braising in the oven. The fat renders in the insta pot and the meat is cooked submersed in fat resulting in meat that is incredibly unctuous.
