What are you cooking or baking today?

It's been a rainy, grey Monday, the perfect day for chicken noodle soup.

The upside is that all this rain is keeping the plants well watered with no effort from me :) I don't mind rainy days as long as I am not planning to go far, sometimes it's nice just to watch it from the warmth with a hot mug of coffee (y)

We took a walk down to the supermarket earlier and the cashier was complaining about the weather. For goodness sake! What do you expect? It's February! Come the summer, she will likely be complaining that it is too hot and we need some rain 🤷‍♀️
 

Still working on emptying some freezer stock. Stumbled over an eggplant dish I must have made last summer. DH & I ate a little last night and we'll probably finish it off tonight. Very tasty.

The sweet goddess of serendipity shifts into high gear when I aim to reduce my freezer contents!
 
NY style cheesecake. Topped it with cherry pie filling. Don’t ask me why I bought a four pack of Costco cream cheese that needs to be used up. I have lots of recipes; none of them come with zero calories.
We used to make tiny ones in mini muffin tins with a vanilla wafer on the bottom for crust and a little blob of cherry pie filling on top. Maybe not authentic but very cute.

I used to make those too. They were great for a potluck type affair.
 
Haven't been cooking a lot since hubby had surgery last week. His food has to be pureed for another week so I've taken soups from the freezer & pureed those which is working good. His diet will be going back to normal very slowly.

Hard to cook for just me, so I've been doing things he doesn't care for. Tonight was a baked potato & cookies for dessert.

We went through a limited food option period after two surgeries. You will do your best to feed him and keep him content!!!!

I always have anchovis. Those little stinkers can be a delight. One of the few things my father and I shared - good bread, buttered and a little fishy on top.

No cooking. Pulled beef & barley w/ veg soup from freezer and made a half cheese sandwich.
I just bought more (dry) pearl barley and am pondering what kind of soup to make when it's raining cats and dogs tomorrow. Since barley takes forever to cook on the stove, I'll try cooking it at least most of the way in my instant pot.

Has anybody here made pearl barley in an instant pot?
 
We had chicken again today, it seems that kind of weather. Put the chicken, vegetables and lentils into the slow cooker this morning and, as a change from noodles, I cooked some macaroni.

@PeppermintPatty seeing the bread you made has prompted me to get the breadmaker out for tomorrow. :)

No. This reminded me I should make a Barley Mushroom casserole. Potatoes are awful at this time of year. It does take a long time to cook. One casserole makes three meals.
The quality of potatoes available in your location doesn't completely represent what's available in CA or the US so the statement that "potatoes are awful this time of year" is not close to being accurate.

I'd go along with that. I just bought a ten pound bag of potatoes for $1.99. All good-sized and in excellent condition.
