What are you cooking or baking today?

Made a huge pot of vegetable soup yesterday. While I do throw in a can of diced tomatoes, this isn't a tomato broth soup. I use some Better than Bouillon, some Herb-Ox Sodium Free Bouillon (chicken flavor on both) and various poultry spices, then stir in a couple of cans refried beans to thicken. Non-fat canned refried beans are healthful and essentially flavorless so they're perfect for making thin broths heartier.

I'll put aside a few large containers for freezing. We'll be enjoying the rest over the next couple of days.

Need to sear some tofu this morning. So versatile - good in stir fries, soups, salads, on sandwiches, and as a chicken substitute in many of my favorite recipes.
 
A pepperoni/mozzarella monkey bread. I had this at a potluck and finally decided to make it for lunch. The half recipe was double what was needed for our lunch. Although it’s good, I doubt I’ll ever make it again. High salt, fat, etc, etc.
 
Not sure if I mentioned trying to freeze my homemade soup in canning jars. The larger one broke the jar. It was cold and the jar wasn’t full so I don’t know what went wrong. Maybe it banged against something else. Good thing it wasn’t my favourite soup, not that it matters since I don’t eat it. DH was dismayed.

??? I have been freezing and microwaving frozen soup in Ball canning jars for a long time. I prefer the straight ones without shoulders.
Did you open the lid?
 
@Jules, whenever I freeze liquid in my canning jars I use these white plastic lids & haven't had a problem. I've heard that regular lids doesn't allow for air to escape after the liquid expands & could cause the jar to break.

I also like to use Arrow plastic containers for freezing soups & other things. They are square & stack well taking up less space.

That sounds logical. Soup would expand if it’s frozen. We don’t freeze our soups. They just sit on a shelf in our cool cellar.

No shoulders. A Ball lid and it wasn’t tight. Lots of room left at the top of the jar. Like I said, it probably got bumped by something else. The single serving size jars were fine.

I’m trying to get away from freezing everything in plastic. Yikes, the glass storage containers are expensive. Based on our ages, it’s probably a case of closing the barn door after the animals ran away.

Have you tried grilling or smoking tofu?

Thanks. There wasn’t any mess. I took the whole jar out of the freezer and saw the breaks all around the bottle. A little twist of the lid and the jar went straight to the garbage.

All my pantry items are in glass canisters.
 
I walked to the Tops friendly market this morning and snagged a three quarter pound package of beef chunks with a manager’s markdown sticker so today will be a version of Peg Bracken’s Stayabedstew.
