What are you cooking or baking today?

Other than morning stir-fries and MW oatmeal, I've done no cooking to speak of recently. Weeks of food prep has wearied me of the process.

That said, I'm strongly considering making mushroom barley soup tomorrow. Not a lot of active work, but a fair amount of passive simmer time. I have everything on hand, including the dried mushrooms, except I will need fresh mushrooms also.

(I just told DH I'm thinking about my thoughts about making the soup and he immediately offered to zip to the store for mushrooms tomorrow morning! ❤️ It's one of his favorites.)

From scratch Beef Stroganoff Sloppy Joes. I used to make them with a can of Golden Mushroom soup, but I'm trying even more to get away from processed food.

I sauteed fresh mushrooms & chopped onions until they began to get tender & added 1# of ground beef with some salt/pepper . After frying that until browned, I mixed in some garlic powder & paprika & then added some white wine & chicken stock cooked that until it reduced a little. Then I added some heavy cream & waited for it to thicken. It did a little, but I decided to thicken it up more with a mixture of butter/flour which did the trick. After tasting it for seasoning, I added sour cream.

If I say so myself, it came out pretty good.
 
Today I'm marinating some chicken thighs and legs in wine, oil , soy sauce and some garlic overnight. Then tmrw I'll cook it up for my brother, sister and sis-in-law. Making bulgur pilaf and a waldorf salad, too.

This is a favorite of ours that our parents always made. Can't wait!
 
Yesterday I broke out the instant pot for batches of quinoa, brown & wild rice, and dried garbanzos. To clarify, I made them separately; it wasn't one big mish-mash. :eek:

After cooling, I freeze them in 1-1/2 cup (ish) increments to have on hand. Had some brown & wild rice with my stirfry this morning. Just finished whipping up a batch of hummus with some of the garbanzos.

While the IP slaved half the day, I made mushroom barley soup. DH & I love it, but it's time intensive so I don't make it as often as my taste buds call for it. This go-round I tried making the barley in the IP and am delighted that it turned out great AND chopped about 2 hours off the 5 hour soup process!
