Cracking an egg is not one of my accomplishments

My mom could tap it on the edge of a bowl and it would split into two perfect halves.

When I do that, the shell explodes into tiny fragments that I spend 10 minutes picking out of a bowl. I read on the web that to properly crack an egg, hit it on a flat surface. For me, that makes a bigger mess than tapping it on a bowl.

I think it all depends on how thin or thick the shell is. Cheaper eggs tend to have thinner shell and break into bits when you crack it....

Paper thin or almost rubbery sometimes thick shells.

I believe that it has to do with what the chickens are being fed.

When you get a few pieces of shell into the egg try using the main piece of the shell to fish them out, it usually works better than a finger or a spoon.

It’s just one of the annoying little problems that we all face as we muddle through life.

The eggs today are the result of not just food but also chemicals to enhance the chickens size, etc. The chicken of today is a tough, tasteless blob of whatever. It ain't the chicken that we ate decades ago.
 
Tap the egg gently. Tap it again. When you see cracks move it over a bowl and use both thumbs to open the shell.

Slap it open and fish out the yolk if you need it separated. Empty water bottle, squeeze it and let the vacuum suck up the yolk.

That don't work with the junk we're buying from around here. A slight tap creates about 15 or 30 small little cracks which you need a tweezer to lift out.
 
As I have already written, my Daughter keeps a flock of hens to supply us with eggs. The old birds are entering retirement and the new chicks are on site and rapidly growing. We always have a supply of nest-fresh tasty eggs.

I was talking to the poultry man at our farm store this past week and he told me that in all his years of selling chickens he's never seen anything like the current market. They get in a large shipment of chick's and they are all gone the same day. Everybody wants a few birds for their backyard.

He predicted that when retail eggs get back to normal there will be many folks who will have learned that chickens are a bit of bother and that the cost of chicken feed isn't exactly chicken feed so there will be a lot of used chickens available.

I could easily raise chickens on my property, have a secure pen where a coup could go. But I don't want to deal with the mess and smell, so at the current price of 83 cents per egg, I'll just take the hit on my 'mad money' funds and move on.

Free range Brown were 4.19 at Sam's today. We use chicken scratch for most of out 50+ pound need for outdoor birds - cheaper to buy eggs.
 
My daughter, at 30 years old, is still amused that I can crack an egg with one hand.

She cracks an egg, and still has to use two hands to seperate the shell.
Due to my various jobs at cooking, including short order cooking in restaurants, one-handed egg cracking is a must. Egg-flipping in a pan is also a must.

Flat surface egg cracking goes mo betta with just a light touch. Ham-fisted egg-cracking results in, well, problems.
 
Not to steal this thread bu st has anyone noticed that eggs are much smaller now. What they say are large eggs are more like small ones. In fact I have not seen a large looking egg regardless of what the carton says.

Egg problem. Buy chick's. We have had chickens for 20 years. We feed them a lot of scraps, and scratch grain. Right now we are getting about 4 eggs a day. Perfect for Misa and I. We do have a coop for them and they need attending to twice a day.

The rooster fought with me the other day. He fly up at me and I kicked him back. That lasted about 5 minutes then he walked away. :)

Like everything else. Ice cream that used to be in half-gallon cartons. Now a lot smaller (Blue Bell ice cream being an exception, but you get the point).
