What Did You Have For Breakfast?

Yes, SS, I have an ongoing battle with using different sweeteners, I try to keep it to a minimum..I have not tried the applesauce, but will.
I buy Aldi's unsweetened applesauce, but can't get through a full jar before it spoils. When opening a new jar I split it into about 1 cup portions. Keep one in the fridge and freeze the rest.
 

Sounds good. Are you using any kind of an oil for frying?
No oil. My standard breakfast:

I dry saute onions then garlic. Take that mix from the pan and dry sear some mushrooms. Add the onion/garlic back to the pan, add a little water or unsweetened fruit juice, plus a good helping of the frozen vegetable mix that I make up in advance (about 10 different veggies). Then I cut up some baby bok choy, napa cabbage if I have it, a couple of handfuls each of Costco power greens, shredded green cole slaw mix, a little shredded purple cabbage and a handful of arugula when I have it.

I also add 1/2 cup defrosted mixed berries, about 1 tbsp sliced pickled ginger, some seared tofu and rolled oats.

Occasionally top it with a few thin slices of avocado, but usually not. It's a lot of food as far as bulk goes, but I'm almost always hungry again within 3 hours. Like now. :cool:

Today's lunch will be a quite large red leaf lettuce salad with assorted fruit and veggies, along with cooked barley and tofu to add staying power.
 
My breakfast surely sounds like a lot of effort and a ton of food @dobielvr, but only takes about 30 minutes to whip up. Lots of nutrients and fiber, and the results are similar to the old adage about eating a a big meal at a Chinese restaurant but being hungry an hour later because it's mostly vegetables.

Although I'm consuming about 3-4 cups of cooked down food, it surely comes down to fewer than 500 calories. Very little fat or sodium. Far less than eggs, bacon or sausage, and potatoes and/or toast.
