What Did You Have For Breakfast?

My breakfast surely sounds like a lot of effort and a ton of food @dobielvr, but only takes about 30 minutes to whip up. Lots of nutrients and fiber, and the results are similar to the old adage about eating a a big meal at a Chinese restaurant but being hungry an hour later because it's mostly vegetables.

Although I'm consuming about 3-4 cups of cooked down food, it surely comes down to fewer than 500 calories. Very little fat or sodium. Far less than eggs, bacon or sausage, and potatoes and/or toast.
Yes, it does sound like a lot of food! I'm just so impressed that you think to combine all those ingredients in to your meals, you eat so healthy. You're very creative with your meal planning, that's for sure.
I try to eat healthy, and I will for a while, but I'm not consistent. Thanks for sharing. 🥝🍉🍠🥦🍆
 
This is my breakfast everyday: 2 pieces of organic whole grain toasts with organic almond butter spread, half of an organic avocado, one organic boiled egg, one glass of organic grass fed cow milk, and one cup of organic coffee(black, no sugar, no cream).
How do you keep the second half of the avocado? I have had limited success in keeping it from turning brown. Now I usually just buy the small ones and eat the whole thing.
 
Actually had the same thing I have everyday, (banana, (oatmeal/sweetener/half n' half/nut butter mixed), one cuppa lightened coffee).

something they told me was a piece of chicken covered in summat - I fried it with chips and a few vegie - vegie tasted washed out and chip near to decent - chicken like cardboard? freezer food
 
I love hash browns especially when they turn darker in the pan. I don't have them too often but am thinking of getting some yams and making some hash browns with those. I've had them before and they are good for those with diabetes type 2...of course a limited amount.
I use sweet potatoes as one of the ingredients when I make sheet pan veggie hash.

It’s an easy inexpensive recipe that can be put together with whatever vegetables you happen to have on hand.

All of the work is in cutting the vegetables in small dice.

A combination of sweet potatoes, white potatoes, baby Bella mushrooms, carrots, red or green pepper, and onions cut in small dice, spray with PAM and season with salt pepper, and cayenne pepper, roast approx. 45-60 minutes at 400 deg F stirring every fifteen minutes.

Similar but I use olive oil and 10 minutes in the airfryer. A few cubes of tofu do not hurt.
