I make a lot of diced cucumber and tomato salad. with chopped spring onions , diced bell peppers, lemon juice & olive oil. Because my daughters know this when they come here from the city they will bring bags of tomatoes and cucumbers with them. I never have trouble using the tomatoe up before they spoil because I can dice them up and use them in cooking, but cucumbers will go bad rather quickly. They don't freeze that I know of, so I began to pickle them. I used to love pickled cucumbers. The thing is I have jars and jars of the things now. I can't eat many at a time & there are so many jars. No one else in my family eats pickled cucumbers. I just cannot bring myself to let food rot or throw it away. There is always this thing in my mind conscious of waste and starving people on the planet. I freeze and label most other things.
