In a pickle...or...pickled

I make a lot of diced cucumber and tomato salad. with chopped spring onions , diced bell peppers, lemon juice & olive oil. Because my daughters know this when they come here from the city they will bring bags of tomatoes and cucumbers with them. I never have trouble using the tomatoe up before they spoil because I can dice them up and use them in cooking, but cucumbers will go bad rather quickly. They don't freeze that I know of, so I began to pickle them. I used to love pickled cucumbers. The thing is I have jars and jars of the things now. I can't eat many at a time & there are so many jars. No one else in my family eats pickled cucumbers. I just cannot bring myself to let food rot or throw it away. There is always this thing in my mind conscious of waste and starving people on the planet. I freeze and label most other things.


Any suggestions for dealing with extra cucumbers before they rot?
 

We ate cucumbers this year until I couldn't stand the sight of them. And I only planted TWO vines. All I know to do with them is slice or dice them and put them in a Sour Cream and dill dressing... or in vinegar and sugar with sliced sweet onion. I won't can or jar anything, as I'm always afraid I will poison us with botulism.
 

I had tons of cucumbers too. Cucumbers can be used like zucchini to make bread. I just peeled, remove seeds and grated, and add them to the batter to make a wonderful tea bread.
 
No if someone has any ideas for rhubarb... other than pie and crisps.. that would be great.. would love to use it as a veggie, but it's so sour that "sweet" is the only way to go. I have tons in the spring.. and I've got a bunch frozen.
 
We have a short cucumber season here as the same often with bell peppers. Soon as the weather gets really warm, they're done. Some might come back as it gets cooler but not always. Won't your kids use some? Any shelters nearby?
 
I eat cucumber almost every day in my salad. In Thailand it is used in some cooked dishes. It adds a different, but good, flavour.
 
Cucumbers at every meal is the answer, try them on toast for breakfast...

Your suggestion of 'on toast' got me wondering if anyone made cucumber jelly. It turns out there is cucumber jelly. I was reading the comments of the people who tried the jelly recipe and they said it was very refreshing and tastes good on things like smoked salmon or crab patties, etc.

Yeah that's the thing..I don't want to eat them until I don't even like them anymore. I make a salad dressing with them using yogurt instead of sour cream.

It's the driving I don't want to do. I live in the sticks, otherwise I'd just give them away.

The only time I ever have eaten rhubarb is i rhubarb pie. Which I LOVE but can't have. I use quite a bit of celery in my chicken curry and it tastes so good..which got me wondering if you could use rhubarb in a curry and I found a recipe for rhubarb and lentil curry here & there may be other rhubarb and meat curries out there-
