I made a cauliflower pizza crust

Awhile back I had stashed away a bag of frozen cauliflower. Not wanting to use it as a hot vegetable in this horrible hot and humid weather we are having I decided to make a cauliflower pizza crust that I had heard about. I had my doubts.You can't taste cauliflower but the cheese when browned in the crust was delicious. Kind of a lengthy process but it was fun trying and it held up quite well. I made an extra crust and froze it. I haven't tried the frozen one yet. Here is the recipe I made.

I really combined to recipes I found. You need 1 cup of riced cauliflower. You can buy it already riced but I had a bag of frozen pieces so I used that. I cooked it in a bit of water until just tender,or you could micro wave it also. Drain well and put in the food processor and process until it looks like grains of rice. You could probably use a blender. This is the most important part. Put it in a towel and squeeze the heck out of it. Sit on it if you have to. I changed towels twice. Now it should be like sawdust. Measure out the 1 cup,add 1 1/2 cups of shredded mozzarella cheese. They say you can use any kind. Add 1 teaspoon dried oregano,1/2 teaspoon garlic salt,1 teaspoon crushed garlic and one egg. Mix it all together. It will look like dough.Pat it out into a 9" circle onto parchment paper on a cookie sheet. and put a little olive oil on top. Bake at 450 degrees for about 20 minutes. you can check the bottom to make sure it is getting brown. The first one I made fell apart because it wasn't brown enough. Cool on a rack and add any topping you want and broil until the top is how you want it. I found it was better to put the cooked pizza right on the oven rack when broiling. The trick is to keep the bottom from not getting soggy. I was surprised how well it turned out. Even when serving keep it on a rack. If done right you can easily pick it up just like real pizza. :coolthumb: I have a bag of the rice kind and regular sitting in the back of my freezer. Likely I won't use it for a crust, as I'm too lazy for the draining process, but very nice recipe looks really good.

I've seen these in the local Wegman's but I just can't bring myself to spend $6.99 for two little pizza crusts.

Hoot N Annie, I agree it isn't pizza but when you can't have the real stuff it's better than nothing. This was more tasty than most substitutes. I was happy to have it. So happy that I ate the whole pie. lol
 
Way to go Ruth. I happen to appreciate your innovative creativity in dealing with your food intolerances.
Cauliflower is a staple in the paleo diet. It looks pretty good to me.

I'm sorta a pizza purist, but...hey....put enough cheese on anything...BAM!

Here, here, I grew up on New York pizza so my palate is very picky, but, when I'm looking for something low-carb or gluten free, which is what many aim for when choosing something of the sort with this type of crust, I'm happy to have an option I can load mozzarella up on top of it with a nice sauce any day of the week. It'll never replace the real thing, but it's a great option as a substitute when needing to omit flour.
 
I always buy mine at Trader Joe's. It's about $4.99 I think but thats for a pizza not just the crust. You can buy just the crust but I haven't checked it out yet.

If you shop at Costco, my sister in NJ said they carry them and are cheaper than at the supermarket.

Ive had a few different ones....TJs and Safeway, all good but the trick is to get the crust crispy, otherwise it can be soggy.

I will have to check the TJ in my area to see if they have it. Maybe even Whole, Foods, possibly Publix, they're all in same general location here.
 
Too much trouble for me. I will stick with Papa John's veggie pizza. Will stick with cauliflower as a veggie and one I really don't care for.
