Awhile back I had stashed away a bag of frozen cauliflower. Not wanting to use it as a hot vegetable in this horrible hot and humid weather we are having I decided to make a cauliflower pizza crust that I had heard about. I had my doubts.You can't taste cauliflower but the cheese when browned in the crust was delicious. Kind of a lengthy process but it was fun trying and it held up quite well. I made an extra crust and froze it. I haven't tried the frozen one yet. Here is the recipe I made.
I really combined to recipes I found. You need 1 cup of riced cauliflower. You can buy it already riced but I had a bag of frozen pieces so I used that. I cooked it in a bit of water until just tender,or you could micro wave it also. Drain well and put in the food processor and process until it looks like grains of rice. You could probably use a blender. This is the most important part. Put it in a towel and squeeze the heck out of it. Sit on it if you have to. I changed towels twice. Now it should be like sawdust. Measure out the 1 cup,add 1 1/2 cups of shredded mozzarella cheese. They say you can use any kind. Add 1 teaspoon dried oregano,1/2 teaspoon garlic salt,1 teaspoon crushed garlic and one egg. Mix it all together. It will look like dough.Pat it out into a 9" circle onto parchment paper on a cookie sheet. and put a little olive oil on top. Bake at 450 degrees for about 20 minutes. you can check the bottom to make sure it is getting brown. The first one I made fell apart because it wasn't brown enough. Cool on a rack and add any topping you want and broil until the top is how you want it. I found it was better to put the cooked pizza right on the oven rack when broiling. The trick is to keep the bottom from not getting soggy. I was surprised how well it turned out. Even when serving keep it on a rack. If done right you can easily pick it up just like real pizza. No carbs in this and gluten free..
