Brussel sprouts

Nice pics and making me hungry!!

I love Brussel sprouts and only small ones as they have more taste for me.
 

Me, too, like the small ones, but find them somewhat bitter and am wondering if it's because they were harvested too soon (see my other post). Do you find them bitter? Maybe it's just my taste buds or genetics.


There are fields of them near me and the small shops sell them on their long stalks and delicious. Supermarket ones are tasteless and not sure where they are sourced country of origin wise.

My mother taught me to cut an X in the base of each Brussels sprout when cleaning them and many years later I came across this possible/interesting explanation.

Back in the medieval ages, brussels sprouts were considered pretty dangerous vegetables. People in parts of Europe, especially Britain believed that demons are hiding inside brussels sprouts. What they did to avoid ingesting a demon is they cut a small cross into each sprout before cooking and eating them. They thought this would save them from the illness the demon would cause them.

I was also taught never to harvest Brussels sprouts until after the first frost, the old-timers believed the exposure to the cold would remove the bitterness and make them sweeter.

That's what I do, cut them like your Mother did, Aunt Bea. My Mother did it and I followed suite. Interesting explanation and I will continue to do that little cross cut. 👌 :)

I cut mine in half, so the demon scrams after being exposed. ;):devilish:

That reminds me. When they brought back tomatoes to the old world from the Americas, Europeans were of the belief the tomatoes were poisonous, so they just used them as decorations on the table.
 
Slice your brussel spouts thin...

Fry 4 pieces of bacon,take bacon out of the skillet..dice it up.

Remove all but about 2 Tbsp. of grease Saute some diced onion....bout 1/2 cup.

Add the sliced brussel sprouts..Saute those a few minutes...add the bacon back in then add 1 Tbsp. of dijon mustard 1 Tbsp. of Honey and 1/2 cup of walnuts.

Saute till good and hot.

I'm not sure on the amount of sprouts ours come in about 1/2 pound maybe...

You'll never eat them any other way.....(y)
 
Luuuurve Brussel Sprouts, I have them a couple of times a week. I prefer the baby ones, but any will do, and I have never had any bitter ones that I can ever remember, ours are always tender and sweet..

As you say @Aunt Bea , we always make crosses in the base of fresh ones before cooking.. but now I tend to only buy frozen..much easier and convenient, and most of the vitamins still in them from not laying around for days..

I prefer mine just steamed or boiled in a tiny bit of water, then a little butter added to them, and nothing else.. I could eat them every day but unfortunately they don't like me as much as I like them!! :oops::whistle:

I prefer the fresh ones, but am going to do an experiment and buy the frozen ones just to see if THEY are also bitter like my fresh ones. I could also try buying the ones on stalks. I've heard that buying tomatoes still on the vines are fresher, so maybe it's true about sprouts (still attached to the mother stalk?).
 
I don't care for the frozen ones..They are too mushy for me.

I am a big fan of sour cream... but I can't even imagine it on brussel sprouts:sick:
 
Bubble and Squeak I know but not done with honey. Sound interesting. I love dark maple syrup - the real thing - and keep it on hand. Could that substitute for honey. If so, how do you do them?


yes maple syrup will be fine......just boil the sprouts then cover with syrup ..easy peasy 😂
 
I had NO idea what a ''Bubble and Squeak'' was, so had to look it up. Found this great recipe below. I'm trying to eat more of the cabbage family.

Today I made "Bubble and Squeak" for the first time. I made a casserole dish of it and also made some patties. They both look delicious. Tonight I'll be having two patties and a salad of tomatoes/mushrooms/avocado/kalamatas/walnuts with homemade Italian dressing, and a cup of Sangria wine, homemade apple pie, and coffee. Yummy! Love potatoes, could NEVER make it on a low carb diet.

Edit/added pics = Who says we vegetarians have boring meals? Haha!

I just made them tonight. They were delicious, recipe went straight to my recipe box, thanks. I am a vegetarian, but used fake bacon and they were good. I cut 6 big brussels into slices and did steam them a few minutes, I had enough for two portions.
