Chicken and biscuit disaster

I never made this dish before, but I had packaged chicken I had to use. I thought buying store made biscuits would be quicker and easier than making them. So I put cubed biscuits in the bottom of a Dutch oven, placed the cooked chicken on top of that, then a layer of mushrooms and poured canned gravy over it, then cooked at 360F for 45 minutes. I sampled some when it finished and it wasn't bad. When it cooled, I put it in the fridge. I just tried to have some for lunch and the biscuits congealed in the bottom and made it very difficult to scrape out of the pot.

Also, why did you cook already cooked chicken for and additional 45 minutes?

...just thinking off the top of my head: maybe some non-stick spray or a little butter or oil coating?
 
Thinking more liquid is needed, as the dough will thicken whatever liquid is in the pot. Don't know how much. Were the mushrooms fresh? If so, they'll exude their own water, but not enough.

I would add the cut up dough to the top and cover, so they steam. I have done this, but my dish is more stew-like.
 
I think if I make it again, I'll put the biscuits on top. I think the problem was being put on the bottom. They soaked up any moisture that was in the ingredients, and when chilled, set up like concrete. I was at a chicken an biscuit dinner with my mom a long time ago, but couldn't tell what was where when the dished it out onto a plate, everything gets mixed up.

That's the way I recall the chicken & biscuits being done.
 
Yep, biscuits always on the top. I am more the type that likes home made dumplings. Now I am wanting chicken and dumplings but it is 100 degrees here. I will wait for the first day in the 50's.
