We are rather partial to red cheddar. Quite popular up here in Scotland.

I did visit the Cheddar gorge down in Somerset once, in my youth. Fascinating place.
 
Nothing beats a XXX sharp cheddar!

When I was a kid all of the old timers insisted on having a slice with apple or mincemeat pie.

I like a thin slice on a crisp cracker with a dab of strawberry preserves and a glass of ice cold milk!

Nothing wrong with that!

Try a a couple slices on a toasted English muffin, run it under the broiler for a minute or two until it is bubbly and gooey, enjoy with an ice cold martini or two!
 
I used to do three when I had a younger man's ability to imbibe, now a healthy double does the trick...
 
I like my cheddar aed, like whisky. At the moment I'm eating a brain numbing Extra Mature Vintage, 3 year old.

Arguably the best Cheddar in the world is Black Diamond from Ontario, Canada.

Unfortunately EU tariffs put it beyond my price range ($25 a pound) but I hope Brexit may drop the price a bit!
