I cook enough casserole or soup for four people, put half of it in the freezer, eat 1/4 of it today, and 1/4 of it tomorrow. I take the other half out of the freezer when I don't have time to cook or don't feel like it. I bake big batches of cookies or muffins and keep them in the freezer. Then I take out one at a time and put it in the microwave. I also make huge batches of home-canned soup and keep my pantry stocked with soup that I can use for convenient meals. I think doing all this takes less time than preparing three small meals every day.
