Do you have leftovers? What do you do with them?

We grilled ribeye steaks over the weekend. They were so huge and there are lots of leftovers so I made steak fajitas today.

We did Italian sausage stir fry on Friday. I’ll make sausage dogs of some kind with a cabbage/Cole slaw side.

We steamed clams a month ago, and froze the clam juice so we can have clams and linguini .. later this week

There’s some broccoli/kale/cabbage salad mix left over from last week’s side, which I’ll sauté with minced pork to make a replica of PF Chang’s lettuce wraps.

I hate wasting food!!

How do you deal with leftovers?
 

Eat it as the same dish, repurpose into other dishes just like you do and some items go in the freezer for future. I like to freeze soups, chili and pasta sauce with meat. Just good to have a few things to pull out when you don't want to cook.
 
I do the same. Since I am cooking for one when I make something I usually end up freezing half of it in individual servings, then having my own pre cooked dinners available when I don't feel like cooking.
 

One Christmas Day years ago, after a sumptuous Christmas lunch, members of the family stayed on for the evening meal. Leftovers from lunch were replated and augmented with additional dishes. The youngest niece looked at the table and delightedly exclaimed "O goody, scraps for tea."

Since then, in our house we call leftovers scraps, and repeat her exclamation with glee.
 
I have lots of family close by, so often leftovers from our kinfolk get togethers get sent home with family.

The leftovers I referenced above are from other dinners in which I or he over-estimated quantities. And I HATE to waste food!!
 
With just the two of us, my wife makes 2 or 3 meals a week....which leaves us with a steady supply of leftovers in the fridge. That gives us a variety to chose from for Supper, and she doesn't have to spend a bunch of time doing that every day. Besides, many of the leftovers taste better, IMO, after they have "aged" a bit.
 
I only make enough for 2 days unless it's soup or chili. I eat leftovers for an extra day then freeze the rest. I don't like eating the same thing for too many days.
 
The one thing I thought I would be doing in retirement is going out to eat a lot. Well, because of the pandemic and now the economy, we don't go out to eat much at all.

In some ways this is ok because frankly, I like what I cook. Most of the time hubby and I sit at the table after a meal and discuss the meal we just ate and how much better and healthier it was than what we could eat out. Because it is just the two of us, we do end up with a lot of leftovers. Heck, half of our meals are from leftovers.

Leftovers are great! They help you stretch your food dollars and you get to eat the same great thing you had before. With maybe a little twist. Yea for leftovers!
 
I bought a smaller crockpot !
Truthfully, both my husband and myself just do not know when to stop adding ingredients into a meal, and we were ending up with too much food. Sometimes, we just ate the left overs, or re-purposed them, and sometimes, the dogs enjoyed the leftovers.
I found a small crockpot that doesn’t hold as much; so I am less likely to make too much food as I was before, and that actually has helped me to make less food.
With winter coming, we eat more hot meals, like soups or a pot of beans; so the crockpot is perfect for That kind of one-pot meal.
 
3 days ago I made breaded pork sirloin chops with a small extra one thrown in which when cubed up went for a stir fry over rice yesterday.

2 days ago I did honey orange chicken breast, the extra will go for lunch today for sandwiches on a brizzolio bun topped with mushrooms and mozzarella.

Creative thinking ahead works for me
 
Dealing with leftovers is pretty easy for me. Leftover ham can become part of breakfast. Leftover ground beef can be stirred into tomorrow's ground beef dish.

Sometimes I just eat the leftovers cold as a snack. It might not be very appetizing (e.g., cold fried egg), but if I'm hungry it does the job.
