Does anyone cook with tofu?

I really enjoy substituting tofu in many recipes calling for ground beef or chopped meat of various kinds. It absorbs all the flavors so well that it’s a perfect addition to stir fries and other kinds of skillet meals.

This is the first time I’ve tried tofu as a stand alone meat substitute, and I’m super impressed!! I made this in the air fryer, and added cornstarch to the tofu marinade to make it extra crispy!

This is crispy air fryer tofu with ginger peanut dipping sauce, and modified caprese salad (basil wouldn’t have worked with the tofu flavors IMHO) drizzled with balsamic glaze. Yum! 😉

I have one tofu recipe I use. It's garlic ginger seasoned, cubed, and browned to crispy on all sides. I think similar to what you made but I don't have an air fryer.
 

I'd like to learn to use Tofu in my cooking.
You folks have given me some good ideas.

I have some Tofu in my fridge now. I was going to have a thick slice for breakfast, with honey drizzled over it.
I learned to eat it that way only from my sister long ago.
 
I tried cooking with tofu in the past, but for some reason, it didn't work for me. Maybe it was because the taste was bland (even with all the spices), or the texture did not attract me.

That actually sounds amazing! Honey, maple syrup, agave, even molasses if you, like me, love the taste!
 
I don't use it often, but I did buy some to try a recipe I saw on a YT video. I'll be making it this week sometime. It's from a 1978 cookbook called Tofu Goes West. It kind of reminded me of a frittata with the eggs. The only thing I'll modify is skipping the salt. I will probably use cheddar- jack cheese.

SPICY SKILLET BAKE
Sauté in a large oven proof skillet over medium heat (in 2 Tbsp oil): 1 large onion, finely chopped; 1 large bell pepper, finely chopped. Remove from heat.

Stir in 1lb tofu, mashed with a fork; 1 can (8oz) tomato sauce; 4 eggs, lightly beaten; 1.5 tsp cumin; 2 tsp chili powder; 1 tsp salt; 1/2 tsp garlic powder; 1c shredded cheese.

Bake at 375 for 40 to 45 minutes.
 
I've never used it as a meat substitute but have used it in a lot of stir fry recipes where it seems more normal. It's good.

Tonight's the night I'm going to be trying this new recipe. I'm at a loss for a side dish... any ideas? Since it's kind of like a frittata... ??? I know salad would work, but I haven't gotten to the store yet and have no salad ingredients. I guess just a veggie but I'd prefer something more ... exciting/unique maybe? 🤷‍♀️
 
I have used the soft tofu in spaghetti before but prefer the firmer varieties. Never used it as stand alone meat before.
