Ham not a favorite but pernil is the go to for the holidays. Not as easy as in the past to have our sons over but they get here early enough now to help. Always buy a large shoulder roast to have some to send with them. Don't need the recipe in this web site just posting to show pictures of what a pernil looks like.

Any ham I've bought the last couple of years was tough and flavorless. I got some of the super thin sliced in the deli section and it was okay. I'm probably having a Cornish hen for Christmas.
We are fortunate to have a pig farm within a 30 minute drive. They raise and slaughter several breeds of pigs.
Their meat is so so good! Tender, flavorful, and not costing an arm and a leg.
 
We used to have a formal Christmas dinner with a beef roast, Yorkshire pudding, etc…

It got to be a dreaded ordeal for everyone involved.

Then we switched to a more casual all day meal that began and ended with spiral sliced ham.

In the morning it was the centerpiece of breakfast and later in the day it was broken down as part of a platter of sandwich fixings, potato salad, etc…

Eventually, we became the part of the family that traveled from house to house.

Coming home to a cold kitchen on a holiday is sad. 😢
 
When we used to have family parties, the person in whose house it was always had a baked ham for the main course. I never took any because after trying it once, it was so salty and seemed under-cooked. Easter was the ham day in our family and instead of baking it, my mom boiled it. I think that got out a lot of salt.

You can choose as much Jamon as you like in the supermarkets in Spain all year round... these are in our nearest Supermarket

we had a houseful for Thanksgiving so we will only have 5 for Christmas Eve. We are all making appetizers, fingers foods, hors devours, lol, and just graze all the day away.
