It's "warm" and sunny at 39F.

I'm fine. Amazing how much better coffee tastes when I drink it on the patio :) :coffee:

Sausage, egg and cheese biscuits made. It's DSIL's birthday so they're birthday biscuits.

Can't decide whether to make Spritz or peanut butter blossom cookies. Not likely both.

Gotta get a wiggle on. Things to do.

Am going to take a whack at making oatmeal peanut butter cookies today. Might throw a few chocolate chips into some to see how they turn out. I need to replace a tahini cookie that I've made for the past few years. Its appearance is a WOW but the flavors are too subtle.
I made some last night and now I wish I'd put chocolate chips in! Good idea. :)
 
Glad to do so, especially since your earlier post about PB oatmeal cookies were my inspiration for giving them a whirl!
Don't forget to chill the dough; it will be extra soft because of the oatmeal/flour ratio. I made the mistake of adding flour to make up for that with yesterday's batch and it kind of ruined them in that they weren't peanut buttery enough.

Oh well. Live and learn. :/

Amen. Fine tuning cookie textures and flavors involves time, patience and trial and error.

I read a bunch of PB cookie recipes and oatmeal chocolate chip recipes, and hybridized them. After a couple of small batches I hit on the ratios that I wanted.

Too many chocolate chips and the PB was overwhelmed. Too little PB and it was lost in the oatmeal. No point in adding butter or Crisco because PB serves the same purpose plus adds flavor. That kind of thing.

Since I'm adding these to this year's Christmas Cookie assortment, I'll be making over 600 of them and I want to get them just right.

Sounds like your cookies are going to be amaze!

You know, it hadn't occurred to me to skip the butter for extra PB! That is a freaking great idea! I am so going to do that on my next batch. :)
 
In March of 2024 I hurt my right arm lifting something incorrectly. It would feel better but never totally right. Today I decided to see a physio who used IFT (Interferential Therapy) instead of TENS and followed up with a light laser treatment. Felt wonderful. She also did some stretching because she thinks it’s a pinched nerve. It feels much better tonight. Not totally fixed, but improved.
 
Good morning. It's not as balmy as yesterday morning, but it's still warm-ish at 39. If we can believe the weathernerds, it'll be a sunny day.

It's laundry day, and I'm still trying to psych myself into making Spritz. I'll let you know how it goes...

I don't think I'm gonna mess around with putting up any Christmas decorations because...it's too much trouble to take them down again! Howzat for an excuse?
 
I've been good for a decent stretch now. I've stopped taking naps and sleep better at night. I am also trying to stick to a more balanced day time schedule and I seem to be having a little more energy. Thankfully my test results from my medical visit came back completely normal, unlike my brain!

with what little sleep i do get i usually will give in to a nap if my body simply can't go on. i take rest whenever i need it. glad your medical visit turned out well.
