How many eggs do you use?

30 yesterday and I will not use anything from Turkey!
Okay. How will you know? Do you think retailers may package them in the same cartons like what we've been buying eggs in all along? If Turkey packs the eggs in cartons of 12, surely U.S. retailers wouldn't just put them out in those cartons in supermarkets.

Wouldn't imported eggs be used by manufacturers for their processed products like cake mix, pancake mix, baked goods, etc and the public wouldn't pay attention to it? I also think a large portion of the public would turn a blind eye to country of origin providing it's still affordable, if it's all that's available?

I have not bought any of these prefab items in a coon's age.
 
I have make a cake using a box mix and substituted 1/4 cup applesauce for each egg. [The box calls for 3 eggs.] It was okay, but not as stable (too crumbly) as a cake made with eggs.

This morning, I found a different recipe using applesauce. I don't know if it's good. I haven't tried it. The website says it does not work with a chocolate cake mix.

2 Ingredient Cake Mix Cake
1 (15.25 oz) box white or yellow cake mix
1cup unsweetened applesauce
Instructions:
Preheat oven to 350°F. Grease interior of a 9" x 13" baking pan.
Mix ingredients In a large bowl until batter is smooth. Pour cake batter into prepared cake pan; bake 30 minutes or until done.

My usual go-to egg replacement is a tablespoon of ground flax seed to 3 tablespoons of water (per egg). Stir it up and let it sit until it gets gelatinous, about 10-15 minutes.
 
I used to buy a box of 60 when I was living in Yakima and that was two a day. One time it was $13 per box. I grabbed two. 3 a day, enjoyed making omelettes.
 
I usually boil up 6 eggs and keep them in the fridge to make up a Caesar Salad or curried eggs with mayonnaise on a sandwich.
I also boil 6 eggs and eat about one a morning with half an avocado and mayo on a thin slice of toasted bread but @hollydolly's story about the man who had a heart attack scares me. Maybe I shouldn't eat so many eggs?
 
We had an old neighbour who told me he ate 2 fried eggs and bacon every day of his adult life. He served in the Second World War Army and was their lightweight boxing champion. He lived to the ripe old age of 86.
