I skipped lunch today

AZ Jim

R.I.P. With Us In Spirit Only
Why? I have a 1" thick Black Angus rib eye steak, a large russet potato which I'm planning to bake and serve with a sauteed mushroom mix on top. Now, this is not my norm since losing my Detta (RIP) but I want to try a luxury meal for a change from frozen food. I have some fresh asparagus spears I may also cook but I don't know if I can eat that much food... Wanna join me, we can share?

Great! What I do when I want a big feast like that is cook it all, then when it's done, divide it in half or thirds, have a portion t today & refrigerator the rest for one or two more meals.

Cut the raw steak in half ( I always use scissors rather than a knife when the meat is raw) .. wrap it an put half aside in the fridge for tomorrow... Bake the whole potato . I usually pierce it all over with a sharp knife then cook on high in the Microwave for 5 minues while waiting for the preheated HOT oven to come to temperature, then put the semi cooked Spud in the oven for 30 minutes... ( you can cook it entirely in the Micro if you wish, depending on the size, but a largish one should take about 8 to 10 minutes depending on the wattage of the Micro)..) ..remember to leave the steak to rest for a about 5 minutes or more after frying or grilling)...

Once the spud is cooked, leave to rest for a few minutes ( a baked spud will stay hot for a very long time if you don't slice it open)...slice the spud in half, and leave one half to cool, and keep it for lunch tomorrow!! (reheat on 3/4 temp in the micro until hot ( 1 or 2 minutes) Enjoy , whatever you decide....

I think I'll cook it all then divide it into two portions. I can reheat 2nd half in microwave. Just enough to heat it not add to cook it anymore...

Rib Eye is my favorite....

I hope you grill it with lots of char..MMM MMM Good!

Left overs cut in strips warmed up in butter and garlic with a side of eggs and hash browns.

Sounds great Jim, I'm glad you're treating yourself to some good eats instead of just the frozen stuff....enjoy!

I know what you mean. Sounds good, though. I was out today to get some scheduled work done on car. While coming home I had a sudden craving for baked potatoes, and oranges. So, stopped at the store, bought a bag of taters and 3 oranges. I have to start eating "right" again. While Rick was in NH, they brought me a sandwich every day when they brought his lunch. Not the healthiest thing to eat daily.

Oh you're so right Marie, it's going to take a little while for you, I'm sure.. to be able to get into a routine of cooking proper meals for yourself, and not slip into that dangerous ''not bothering to cook just for one!!

How are you feeling at the moment Marie, ?..it's only days since you lost your dear husband isn't it?:love_heart:

Jim, you can use the leftover steak to make quesadillas...yummy. Just slice it thin and put in a flour tortilla with cheese, leftover mushrooms, sauteed onions, peppers, etc. Heat on a griddle or fry pan to melt the cheese.

Mmmmmmmmm sounds good and being in Arizona I always have tortillas.....

I agree with RR, warm steak on a salad with blue cheese dressing is a good way to use the leftovers.

Next week you better order two steaks! :):playful::eek:nthego:
