Microwave Omelettes..

This I have mastered. I took care of friend who had a below the knee amputation due to diabetes. This was a big guy, 6'4 350lbs. I told him you come recover at my house but you are gong to eat right!!

Every morning, 3 egg omelette, stuffed with vegetables and some cheese, low carb/sugar yogurt and two slices of turkey bacon or sausage.

Lunches and dinners also healthy. He also got a diabetic snack plate mid morning and afternoon. He never went hungry.

Saturday nights were given to special things he liked. They were always researched and prepared in preference to his condition. Let's say I can make some mean oven fried catfish!! LOL

When he went home, he had lost 30lbs and his blood sugar was 5.1.
 
Could someone give an exact recipe please? I hate the cleanup from stove top eggs and would like to try to microwave version, so, how to do it?

You need a suitably sized dish/plate with raised edges.Lightly greased.
Beat together your eggs and whatever you add-butter,milk,water ,pepper etc.

pour into the dish and cover.
i have an 800 watt microwave.
i heat on high for one minute.
Then check how it’s cooking.
give the uncooked bit a little stir.
Then heat in short bursts until cooked.
Exact cooking time depends on how many eggs you use.
I do any fillings separately and add after the omelette is cooked
Omelette is easily folded in half and removed from the dish,although it doesn’t have to be removed.

WOW! I made one yesterday. It must have been a year before that! I had some ground beef and cracked two eggs with it, beat it up for about a minute, put it in for 1 minute, scrambled it up again, back in for 30 seconds....done. Add little salt and that was my breakfast! :)
