Mom's Pimento Chip Dip

It was to die for!

She bought it in the late 70's but I haven't found it anywhere on grocer's shelves in my Province. It was a pink container. Do any of you remember this type of dip?
 

For me, the best pimento cheese is a brand called "Palmetto Cheese". It was first made on Pawley's Island in South Carolina and it was hard to find outside the state. Now, Walmart carries it and so does Amazon. I always ate it on crackers and cooked with it.

Alas, I have been denied any dairy products at all for the forseeable future, so alas, I cannot eat it. I'm mourning....disconsolate...missing my best cheesy friend....
 

When I was a kid there was an elderly spinster that always brought a small bowl of macaroni salad with diced pimentos and cheese to our family reunion. I think that she used Creamette brand macaroni.

All of the older women used to quietly laugh and cluck about the small amount for such a large gathering and they all made a beeline for that little bowl. šŸ˜‰šŸ¤­šŸ˜‚

Palmetto Cheese is about the closest to home made I’ve tried. They have a whipped version now that’s a great dip. My wife has a recipe from her mother (both her mother and grandmother were county home economists) that’s really good, using sharp cheese, it’s a pain to grate and requires a powerful mixer, but worth the trouble for really excellent pimento cheese.

Her cheese straws are to die for too.

I haven’t thought of cheese straws in years!

Mine were always shaped like coins, similar to this recipe for Cheese Hokies from Gladys Taber.

I made something similar in the 70s. Cheese was considered a staple back then.

In a pinch you could substitute roasted red peppers.

They are not as sweet but very similar.
I have a jar from Costco. What was I thinking? I don’t even have a clue about what I was planning on making. My fridge is small and packed with everything but what I need. I really need to get the kalamata (sp?) olives in there.
