Meringue seems to get a bad rap these days.
This is my mother's recipe for mile-high meringue that doesn't weep.
Combine sugar and cornstarch to remove any lumps, add boiling water stir and cook for a minute or two, cool to room temp covered:
1/2 cup boiling water
1/4 cup of granulated sugar
1 Tablespoon of cornstarch
dash of salt
Whip three egg whites until stiff, fold in the cooled sauce mixture and pile onto the top of the pie.
Bake in a preheated 375-degree oven for 12-15 minutes or until the meringue peaks are lightly browned.
