New Spaghetti Squash Recipe

Yesterday I made a new recipe with a spaghetti squash I got at the farmer's market. It cooks in 7 minutes in the Instant Pot. I always cook it in there but this time I found a new way of serving it and think I will cook my acorn squash the same way but different meat. I am writing a blog post about this with photos but wanted to share it here as well. I need to eat soft, cut up or ground foods due to my dental issues. So I have been experimenting and making new recipes. Good recipes. Not bland or food I just have to tolerate.

First I cooked the spaghetti squash in the IP - cut in half and scoop out the seeds with a grapefruit spoon. Put 1 cup of water in the pot, then the rack and put the squash on the rack. Set for manual or pressure (depends on your IP) for 7 minutes. That is it.

While that was cooking, I cut up an onion and some small red,yellow, orange and green peppers.

When the squash was done, I let it release on its own and then took it out and emptied the water out.

Next heated bacon grease (but you can use whatever oil or butter you usually use) in the IP cooking pot. Put 1/2 lb. of ground breakfast sausage broken up real good to cook. Then added the peppers and onions and let it cook till they were soft and sausage was not pink.

While that was cooking I removed the shell from the spahetti squash. I then mixed the squash right into the pot with the sausage and vegetables. Let it cook for a few minutes. This was so good that I did not even add any seasonings to it. But you can add whatever you like.

This can be made with any type of squash or ground meat. Or skip the meat. I love the flavor and smell of onions and peppers when cooking so this was especially good to me. Using just one pot to cook in and I saved the rest in the refrigerator in the same pot. I like to cook with as little mess as possible.

I would make some substitutions that are right for me, but I very much enjoyed seeing your pictures, and reading your ideas, and the methods you used!:)

They give me some new ideas to try, which I sure could use some!

I too need soft, cooked or fine-ground foods.
It's also nice to see your IP cooker, instead of my trying to imagine it, and how you use it! o_O:ROFLMAO:

That is what I do for any recipe I see, substitute ingredients I like for the ones I don't. Almost every casserole uses rice or pasta. I am experimenting with using different vegetables for those.

One change I made making soft food is to never cook a patty again. Ground meat makes a difference. I can't eat it as sandwich or on a bun anyway.

I wrote two that are eBooks in the Kindle shop on Amazon. Didn't get great reviews because at that time I could not do a lot of pictures in them due to my solar system not giving me a lot of power. And my internet connection. So that was it for that. I put a lot of recipes with photos on my blog now.
 
Amen to that! Even I can cook a good squash. I love spaghetti and acorn squash and grow them in my garden which makes them doubly good.
I grew them in my garden too. I miss that. I canned all but the spaghetti squash. If we had no money for food, we at least had plenty of squash and green beans to eat from what I grew and canned.

Many decades ago we had very very little money, made 3000 a year. It is so hard when that happens. We didn’t have access to a garden. (I may have told this story elsewhere), He worked part time at an independent pizza place. Every night, wonder of wonders, there was always a left over pizza that someone had failed to pick up. I’ve never forgotten the owner’s kindness.
 
I usually make my spaghetti squash in the oven, cut in half, on foil, on the cookie sheet. The edges get kind of burnt and tasty.
The acorn squash I can cook for 5-6 mins in the microwave...after poking it w/an ice pick!

I like butternut squash too. But that thing is soo hard to cut, even after putting it in the 'wave for a few mins.
 
One thing I would say about spaghetti squash -- as a Type 2 diabetic -- is that it jacks up my blood sugar. Maybe doesn't happen to everyone, but it's something to check if you're going that route.
 
Really, I wouldnt think it would.
I'm surprised.

My mother was diabetic, so I'm always aware of it, and the choices I make with food.
Get tested all the time.
 
One thing I would say about spaghetti squash

I'm surprised too, but not well informed about it.
Would it be that it is high-carb, and/or, high glycemic, probably,
that might cause that problem with it?
 
As far as I recall, there's just a lot of sugar in it, which I found through my blood sugar tests.
