Yesterday I made a new recipe with a spaghetti squash I got at the farmer's market. It cooks in 7 minutes in the Instant Pot. I always cook it in there but this time I found a new way of serving it and think I will cook my acorn squash the same way but different meat. I am writing a blog post about this with photos but wanted to share it here as well. I need to eat soft, cut up or ground foods due to my dental issues. So I have been experimenting and making new recipes. Good recipes. Not bland or food I just have to tolerate.
First I cooked the spaghetti squash in the IP - cut in half and scoop out the seeds with a grapefruit spoon. Put 1 cup of water in the pot, then the rack and put the squash on the rack. Set for manual or pressure (depends on your IP) for 7 minutes. That is it.
While that was cooking, I cut up an onion and some small red,yellow, orange and green peppers.
When the squash was done, I let it release on its own and then took it out and emptied the water out.
Next heated bacon grease (but you can use whatever oil or butter you usually use) in the IP cooking pot. Put 1/2 lb. of ground breakfast sausage broken up real good to cook. Then added the peppers and onions and let it cook till they were soft and sausage was not pink.
While that was cooking I removed the shell from the spahetti squash. I then mixed the squash right into the pot with the sausage and vegetables. Let it cook for a few minutes. This was so good that I did not even add any seasonings to it. But you can add whatever you like.
This can be made with any type of squash or ground meat. Or skip the meat. I love the flavor and smell of onions and peppers when cooking so this was especially good to me. Using just one pot to cook in and I saved the rest in the refrigerator in the same pot. I like to cook with as little mess as possible.
