I rarely order a steak if I go out to eat as I can cook a pretty darn good one at home. Going out for a nice dinner, in my mind is something I can't cook at home or access the quality, like seafood, for instance. That said, I prefer medium rare. I have got it down to a fine science now at home. Generally, 2 or 3 minutes per side, depending on thickness of the steak. I also stand there, touching with a finger tip, should give to the touch, should not have to poke the steak, if it feels firm, you have gone too far.
Take it out of the pan or off the grill, let it rest for 5 minutes to reabsorb the juice into the meat. I use that time to add toppings to the baked potato, dress the salad etc. Then you are good to go. In addition, when we go out to eat, I like the salad served with the meal, it is a side dish for me. I don't like it as a so called starter. Am I weird?
