Coffee Jell-O 😋

Prep Time: 5 Minutes
Cook Time: 8 Minutes
Cool and let set for at least 3 Hours in the refrigerator
Yields: 4 (4-oz.) Servings

1/4 cup cold water

3 teaspoons unflavored gelatin powder

3 and 1/4 teaspoons of instant coffee (I use decaffeinated instant coffee)

2 cups of water

3 packets of saccharin sweetener, or 2 Tablespoons granulated sugar

Reddi Wip Original Whipped Topping Made with Real Cream


1.) For this recipe, place the 1/4 cup of cold water in a small bowl. Then add the 3 teaspoons of unflavored gelatin powder; stir well with a spoon, then set this aside for now.

2.) Now place the 2 cups of cold water in a small saucepan, over medium-high heat on top of the stove. Bring to a boil, then add the instant coffee granules and sugar; stir well with a spoon, then set this aside to cool for 15 minutes.

3.) Add the gelatin mixture to the coffee-sugar mixture, and stir thoroughly until it looks well combined.

4.) Now pour the coffee gelatin mixture into 4 individual serving bowls and place them in the refrigerator for at least 3 hours. Then top the coffee flavored gelatin with a generous amount of Cool Whip or Reddi Wip.

Well it is Friday again. Seems like we just had it. This morning I am planning on making more keto shakes to put in the freezer for ice cream. Plus working on that never ending paper pile again. And dusting........need to remember to add that to my list. Feels like a warm day so far.

Yesterday morning, I looked up from my computer and thought I saw something outside my window. I went to it, and there were two pigeons on the sill! When they saw me they flew away. I would have liked to get a picture of them but they would not stay. I have watched a few videos lately about pigeons because there are 4 who live outside our building. They mate for life so this must be two couples.

I need to get some groceries but will wait and maybe do that tomorrow.
 
Today I have a foot doctor appointment later in the afternoon. Sonny is taking me. It is not something I look forward to. I am considering having a pedicure at my hair salon in the future. All the doctor does is cut and grind the nails. The doctor has cut my toes at various times and made them bleed. I will see how he does today but will be talking to the girl at my salon on my next appointment.

Yesterday, in the backyard here, where the smokers gather............3 of them got into a huge argument. For more than 2 hours. Loud yelling and swearing. I was talking to Sonny on the phone and he could hear them. Crazy people getting high all day and instead of it making them happy it makes them grouchy and mean. It doesn't really affect me but it went on for a long time. I had to turn my music up so I would not hear that ugly noise. I hate fighting and loud yelling and screaming.

I am back from my appointment and a short trip to Walmart. My appointment went fine this time. The doctor was quick and did not hurt me even once! No blood! I guess I will continue going to him.

I know I am so weird. As soon as I come home I want to put my nightgown on but think I should not do it till at least 6:30 PM. Sometimes people come to my door and I don't want to be ready for bed too early. Not that I am going to bed just like to be comfortable.
 
I have had a busy day so far.....and that is as far as I am going. Only have supper and dishes to wash left. I have been downstairs in the laundry room while washing and drying bunny blankets and other odds and ends. Tomorrow I need to get up early to walk to social services to get help on my son's medicaid papers. A big mess!

I was studying my electric bill and see that I use more electric for lighting, of all things. Yes, when I think about it, I usually have 3 lights on right here by the computer all day and till I shut the computer down. And the one on the stove hood in the kitchen. 32% of my usage is for lighting. 28% is for the kitchen. I don't really know if these are bad numbers or not. Now we have the smart meter here so I can see these things. Even though I get help with my bill through HEAP (Home Energy Assistance Program).

The UHC card is history as of Jan 26. The benefit on it for food is cut about fifty bucks and only available to people with chronic health issues (which I do not have). It was nice while it lasted. I didn't expect it in the first place and it seemed too good to be true. I will manage fine without it.

Now I am going to color for awhile and then cook a ribeye steak for supper.

For comparison my September bill was for $69.51. That is for electricity and cooking gas, hot water and heat are included in the rent. The electric only portion was $47.48.

In my case most of the bill is for delivery fees and there is little incentive to cut back on the usage.

Kathy, I JUST switched from Wellcare to United Healthcare, I haven't even received the Ucard in the mail yet!! Oh no!

Well its not necessarily bad. Just that I was basically using it for the $211. of food every month. If I had a chronic condition I guess I would at least get $149. on it, but I don't.
 
I walked to the county office building at noon to get Jeff's paper work in. Turns out they do not see people on Wednesday. You can drop off papers but no appointments or talk to anyone in person. So the receptionist made copies of all the papers and hopefully someone will get back to me in a few days. It was a hot walk but I had no problems.

Talked to the manager for awhile before I left. She had a paper I needed for Jeff. So she is coming here on Monday, Wednesday & half a day of Friday. Or so she plans to do that.

Yes, that was the only reason I switched. I know a few family members and friends who got the $211 month. I don't have any chronic health issues, so I'm very disappointed to hear that I won't receive that money in the new year 😥

Glad the appointment with the doctor went well! I also feel like dressing down once I'm home, and like you, want to be comfortable.
