saving and preserving eggs

Currently there's a huge shortage of eggs in stores here.. I don't know about where you all live, but here eggs are as rare as their mothers teeth apparently in many places... I only learned about this the other day from a friend having not been to the supermarket for while myself ...

...so I had already a couple dozen eggs in the fridge..and as it's only me that eats eggs in this house, I felt I needed to preserve most of them for use in baking etc, as these shortages gets worse ... so I've just frozen a dozen whole raw eggs...

You all may already know that you can freeze raw whole eggs but I didn't know this at all until the other day..( there's lots of Youtube videos)... and so I have separated yolks from whites and added them to a deep ice cube tray individually.. ( if your ice cube tray is not made of silicon then spray it with a light coating of oil first to help release them when you need them).. and then I mixed 4 whole eggs together ( you have to gently fork them together don't incorporate air, just gently break the yolks into the whites)... then I poured those into a small clip seal container, and I've frozen them all

To defrost simply sit the container in warm water fro a few seconds... and they will release and can be used exactly the same way as a fresh egg..

Thanks @hollydolly .... didn't know you can freeze eggs! ... Will save that information for the future.

I haven't been to a grocery store lately, so I don't know if eggs are in short supply - - probably!

I knew about frozen eggs, (I had once bought them frozen from a grocery store, years ago)
but I had forgotten that option, entirely, so thank you for posting this, Holly....

The info you gave, has some good and additional, specific ideas in it, too.
I will definitely be searching to see what type of containers I have , that I could use to freeze some of them.

Very interesting, Aunt Bea's post also.

(It's far too late for your suggestion, @StarSong :ROFLMAO: )

I have been freezing eggs for years. I don't bother separating them. I mix them together with a wire whip and freeze in small containers enough for the hubby and I to last a week. I defrost them in the refrigerator and use them as scrambled eggs. For cooking or baking one whole egg equals 3 1/4 Tablespoons of the mixed egg.

I have been able to get eggs but they are limiting them to one dozen so they get used right away.
These days we switch off once in awhile to oatmeal or other cereals.

I have frozen eggs before, a few bags of 2, scrambled, each. Good way to store extra, but it was just an experiment. I don't eat eggs that often and don't bake.
actually that's a point I forgot to mention, that you can store the whole egg mix ( remember not to incorporate air) in small zip lock bags ...lie them down flat in the top fridge freezer, and when you have a few of them frozen, stand them up in a row in a container, like books and store in your freezer ( remember to date the packets . In the small freezer in the fridge they last 3 months in the Deep freeze..9 months !!...
