St. Patrick's Day dishes and treats

Well after gettin' banged up and shook up in yesterday's auto accident I don't feel like doing much cooking. Still having the neighbor join us, he is allergic to beef, so we can have the corned beef and cabbage in a couple days, but DW's making a green salad and I threw some pork chops in the crockpot. The O'Brien hash browns can go in the oven, the Guinness is cold, and a couple select bottles of Irish whiskey are within reach. ;)
 
Mama is fixing what I guess you'd call a traditional boiled supper for tonight....corned beef, potatoes, carrots and cabbage.

She doesn't but I like a little horseradish sauce on my corned beef when I eat it and she always purchases one large enough for the actual meal and to have some leftover so I can have a sandwich (or two :)) the next day.

That looks a lot like why my mom used to prepare, although she always got a corned beef round, not brisket.
 
Well I don't know what to think, the corned beef directions said I could put it in the crock pot, cover with water and cook on low for 10 hours. I did just that, but here's what I got:

The thing is tougher than my work boot, has the visual appeal of cadaver meat.

...only thing I can think of is to keep cooking it in the crock pot, maybe overnight.

I'll turn my attention to the head of cabbage. I'm pan frying some pork breakfast links, chopped up. Also, diced up a white onion and will saute the cabbage and everything. I have another bag of those O'Grady hash browns I could add.

I haven't used my crock pot in a few years, but I always made my corned beef and 'fixins' in it.. always turned out good..

The cabbage turned out well, more "Southern" than Irish Lol.
