Transitioning to Veganism/Vegetarianism

We have choices of evolving or devolving, of life or death. We're carnivores, we had evolved into something marvelous. Now look at us, sniveling sheep, we don't even nurse our young. Shame on us. We're goin' down. And deservedly so.
So slap me, I can't help what I think.
I just know I'm not giving up meat. Lol. And I love veggies as well. I call that pretty balanced. Lol.

As humans, we can eat a variety and I'm not giving up any of it. If some choose to, well I guess that's their choice.

I count myself as fortunate in that I have no allergies and I love a wide variety of foods so I don't have to ensure what is or is not in something. Thank goodness. If I have to change something at some point for health reasons, well that's different but I'm sure not choosing to give up any food group otherwise.

And for the last year many a doctor has been pushing more protein for me. Could I get that from beans, etc.? Well sure, and I eat those too but I'm not limiting my proteins, especially when I enjoy meat and a very good variety in my diet, and no need again to check labels and so forth, no headache.

My favorite place to eat is a steakhouse right up there with an authentic Italian restaurant and an authentic Chinese restaurant. And yes, meat i my meal or in my meal, at each of them.

Like you, that's just my opinion. It doesn't have to be shared.
 
I've had to give up all dairy products and it hasn't been easy. I have come to accept almond milk for my cereal (but not to just drink) but I haven't found a cheese substitute yet. All I've tried are awful!
That would be hard.

I did have a period of time I was supposed to go low salt. OMG. I mean I can bring it down but snacks and you name it finding things for was not fun. I had things I could replace with some things but certain times of the year where I live, produce isn't great. I started to eat a lot of fruit and produce which affected something else.

Right now so long as i don't go overboard, I can pretty much eat what I want and I appreciate that every single day as I like a varied diet and menu.

I think I could cut out cheese and milk before any salt. I use both cheese, milk, etc. but not a ton of either.

Then I found myself replacing salt with sweet. Like that is good either?? I've always been a more savory type that sweets person. Or I'd limit all foods all day and save the salt I could have for ONE normal meal with salt.

So yeah, when one has no restrictions or few, enjoy it. I'm cutting out no food groups unless I have to :)

Most cheese substitutes are pretty bad, and I've tried a boatload of them.

After shifting to almond milk twelve years ago, I'm used to it. For creamier needs, I mix almond, oat & soy milks. Thicker, creamier consistency. Oat milk is especially good at adding heft.

I avoid coconut cream and milk because they add an unwelcome coconut flavor. Almond, soy & oat milks have more neutral flavors.

I kind of live with everything moderation and in everything in moderation outlook (except meat and poultry in my case) but believe the same regime is a good place to start for all of us. But as I have said here before I would have a hard time reducing my cheese intake!

Yeah, moderation with most is a good way to do it.

I buy cheese but then never seem to use it lol. I do use a fair amount of parmesan as I use it in making various pastas (not in all of them though) and cheddar for the same reason. I DO like a good aged white cheddar on occasion just for eating purposes.

I mean if I am at a holiday or somewhere that there is a cheese and sausage tray or cheese and fruit, etc. or charcuterie, of course I eat it because it is sitting right there lol, but I just find I don't gravitate towards cheese at home. For snacking I don't, and I'll buy occasional Gouda, Havarti, Provolone, etc. but then never use it up. So I've just scaled it back to what I use fairly often. I don't like wasting food lol.
