What are you cooking or baking today?

Yesterday evening while our toddler grandson was playing with DH, I had time to throw together a salad with more ingredients than lettuce and tomatoes. :cool: Looking forward to having that for lunch today.

When he's here I'm on the double jump so rarely get a moment to cook or assemble anything more complex than oatmeal.
 

Not today, but last night.

Went outside and grilled some chicken breast that I sliced through into thinner halves with a really sharp knife. Marinated in lime juice and chopped jalapeno and onion for 2 hours. Then basted on the grill with garlic butter until just cooked through and a little bit crispy on the outside. Plenty left over for sandwiches or whatever.

This came out really well, and the cooking smells had both dog walkers and their animals sniffing the air as they came by.
 

Yesterday I made escarole and beans. Ate w/ 2 slices garlic toast.

Also sauteed a few mushrooms, chopped onions and a dash of half and half to moisten. Cut up the remains of a rotisserie chicken, and added rosemary and heated through.

Yesterday we grilled a ribeye & had bacon wrapped asparagus from the grill to go with it. Hubby seen the asparagus being done that way from the Bearded Butchers. The asparagus was thick which worked out well as long as the bacon had to cook so it was overdone. Differently will be do the asparagus again. I was thinking that if you had only thin asparagus, par cook the bacon first in the oven & then finish it on the grill.
 
I'm tired now of escarole and beans, also chicken and mushrooms after 2 (or was it 3?) days!

I want to make a quiche, but must decide on what to put in it. Gruyere for sure and sliced shallots, but what about asparagus or broccoli? Bacon or not? Any suggestions?

Mushrooms. A little bit of red pepper makes it look pretty, if nothing else. Artichokes.

I'm out of mushrooms now and although I did have artichokes on my last shopping list, I forgot them! 😖


Spinach is good too when using a feta cheese. You’ve got me thinking I need to make a quiche soon.
Yes, good idea. I have frozen spinach but no Feta. Since I buy frozen pie crusts and they come in pairs, I'll pick up some of these next shopping trip for the next quiche.
 
I’m pretty sure you’d like them; most people don’t because they taste too ‘healthy’. Not much sugar so they don’t taste like a cupcake. LOL
I'd like them even if they did taste like a cupcake - no aversion to dessert - but I do like bran muffins that aren't overly sweet.

I always have some feta in the freezer. (Occasionally I have a personal feta crisis/emergency: Must. put. feta. in. the. Greek. salad.) It defrosts really well, as opposed to most cheeses.
 
@RadishRose you can't go wrong with bacon. But then I'm a baconholic 😁. I use the entire green onion chopped when I have them. I also like to use sundried tomatoes chopped up. If dried, I'll rehydrate in hot water until they soften & then dry them. If packed in olive oil, I'll drain on paper towel. Quiches are so nice because you can just about anything you like in them.
