What are you cooking or baking today?

Most of the fresh strawberries were baked into a cake. I haven’t tested it yet.
The good news is that I won’t be gaining any weight eating this one. So dry, even with ice cream. The strawberries weren’t juicy and when making it I felt it required more butter. DH won’t throw anything away, so I guess he’ll be having this for his lunch.
Edited: I’ll put a bit of sugar and real vanilla on some sliced berries so it may be a bit more palatable for him.
 

I pulled together a large enough salad yesterday to cover today's lunch. With summer fruits starting to hit my produce stores, I'll shop today or tomorrow with a Waldorf-style fruit salad in mind, but with strawberries, blueberries, nectarines and mango chunks taking center stage. Grapes aren't in season, so forget those. However, I'll grab some apples if they look good and will also throw in chopped walnuts, celery and diced dried cranberries.
Wound up making the Waldorf-ish fruit salad yesterday and it sure is yum! Of course, grapes just went on sale for $1.29/lb so I'll have to make another trip to the produce store so I can throw some in. During warm weather I almost always have fruit salad in the fridge. It makes a great snack and/or dessert.

Yesterday, I made meatballs from a recipe my friends wife gave me years ago from work. He always brought them in when we had a carry-in. The recipe is called Spicey Meatballs, but really aren't with the little bit of hot sauce that goes in them. Made out of beef, with a tiny amount of chopped onion & green peppers a few spices. The sauce mimics the spices in the meat with a few extras & is what really makes them good ketchup, apple cider vinegar, brown sugar, garlic powder, chopped green peppers, Worcestershire & mustard.
 
I used a small canned ham that was past the best buy date to make a ham and bean soup.
I cooked some white and pinto beans in the instant pot. Then I added a pork broth I'd made, carrots, celery, jalapeno, the cubed ham, a bit of greens, herbs and spices.
It's pretty good. Just a bit of spice from the peppers but not overly.
