What are you cooking or baking today?

I like the Betty Crocker sugar cookie mix so I baked some quick cookies this evening. I usually stir up a bag, bake 12 cookies and store the rest of the dough in the freezer in a plastic storage container. Whenever I want some, I take the dough out, pinch off 12 lumps and bake the cookies. The bag makes a good amount of dough. I use it about 5 times before it runs out. I make the cookies thin and usually small.

I pressed chopped Twix into the cookies dough on the left. I pressed the center cookies dough into raw sugar. I pressed caramel and white chocolate chips into the cookies dough on the right. I usually use chopped nuts/raisins instead of Twix because I don't always have that candy. Ever since I started doing this, I stopped buying bags of Pepperidge Farm Tahoe Cookies. I save so much money! 👍🏽

It's just me and the 12 cookies never last very long. I'm ashamed to share how long they last. 🤭 I'm always working on my eating addictions.

Shrimp in tomato sauce w garlic and white wine on top of linguine and roasted Brussel sprouts.

Tough selection of veg at store yesterday, would have preferred something other than bs, but it was the only decent green veg.
 
see I never learned any of this from Ma who was always full time working - I was sometimes offered tripe boiled in milk as a fancy dish - can't remember any slap up meals apart from Xmas. My two wives were also no fancy trimmings cooks

I didn't learn at home either. I learned the basics in high school home economics class and then I took a liking to recipes and cookbooks. I love trying a new recipe and watching how it comes out, especially baking.
 
@StarSong That quinoa salad sounds delicious and I’ve every ingredient except your salad dressing concoction. Wait - no parsley.
I hope you enjoy it if you decide to make it. Fresh parsley is crucial.

I always make a large-ish batch: 4 cups of the basic starch. It lasts at least 4-5 days in the fridge. Never had it go south because DH & I go through it pretty quickly for lunches, dinners or snacks.

The recipe I listed is my version of the Internet's widely published "Jennifer Aniston Salad" (which she has repeatedly disavowed as being one of her recipes, but agrees it's healthy, delicious and similar to foods she often eats).

Mine is a kicked up with waay more veggies, but none of the oil, nuts or cheese.

I also vary the beans. Sometimes garbanzos, other times black or kidney. When using black beans, I add them just before eating lest they leach color, turning everything an unappetizing grey.

I bought some silken tofu and had to use it so I blended it with a pkg of plain gelatin and strawberries that were not very sweet. They needed to be used. I added sweetener, some erythritol (also want to use up), homemade vanilla, tsp lemon juice, and homemade Stevia tincture.
So we'll see later how this dessert tastes.

This was not bad. Sort of like flavored yogurt.
 
I cheated and treated myself....Penquin Chicken i think the
name of rest that I ordered delivery from....so I won't use
anything but the micro for rest of the week, and so yummy.!!
Sounds like a good idea @hawkdon I am trying to use the stuff in our freezer atm so am avoiding the deli and their ready cooked rotisserie chicken although, I might have given in to temptation by the weekend :)
