What are you cooking or baking today?

Time to restock the freezer with vegetable/potatoe soup. Potatoes are roasting with olive oil, garlic, thyme. KitchenAid is ready to do the chopping of everything.

SO wants burritos. Fine with me. Grilled chicken/onions, black beans, plenty of shaved jalapenos. Air fried with a sprinkle of Pepper Jack.
 

Baking a batch or two of biscotti is high on today's to-do list. Will also throw together another quinoa salad. We blew through the batch I made last week within a couple of days and DH is Jonesing for more.

Didn't get to either of these, so they'll move to tomorrow's list. Instead I shifted my attention to some business purchases in anticipation of rising prices and likely supply chain interruptions.
 

OK, true confession time, folks. I slipped hard from my WFPB way of eating last night. Yup. Stumbled over a bag of leftover chocolate Halloween candy and fell right in. That was dinner. And it was delicious, too. 😋🍫

Back to healthier foods today.
 
I’ve never been a real fan of stir fry's but after looking up a “recipe“ for a SF ….SAUCE (recommended by a friend )
I’ve changed my opinion of them .

I’d tried SF in the past they tended to be bland due to lack of knowledge of what type of sauce to use .

I decided to give it a try last night ~ it’s basically a mix of 4 different ingredients …that can be made up and kept in fridge for weeks.

I made chicken based last nite , next time I’ll try beef (also made steamed rice to have with S.F )

Thank you Kadee. I keep it pretty generic so I can add meatballs, cooked chicken or who knows what. A few pushes with a subversion blender create enough starchy goodness to bind it a bit. Some potatoes flakes will do the same.
You sound Like me where it comes to making a soup / stew what’s in the fridge or garden gets added
I’m going to make soup tomorrow or today of the stock thaws ( it’s in a ltr size preserving bottle ) so I can’t tip it into pot till it thaws .

I looked and I only have 2 potatoes so I’ll go pick a butternut pumpkin to add to what ever type of soup I come up with ,was intending using red lintels , well they are orange in my eyes but called~ red
carrots think there may even be a Swede lingering in the crisper …( you may call it turnip )
The stock was only made a week ago ~ from the contents of the bottom drawer of crisper ham bone / chicken / bones legs from full ones I’d cut up for casseroles ,so it quite full of flavour just needs some “ thickening “ veggies

For some unknown reason I decided I needed to make something my mother used to make when I was young - a Tomato Soup Cake. It’s basically a spice cake with a can of tomato soup added. The recipe didn’t call for chopped walnuts; I added lots. Topped with cream cheese icing. The cake is good. I wouldn’t rush to make it again.
 
Yum Yummy …and all that @PeppermintPatty …that looks delicious ..today we will be having the lintel soup I made yesterday ….it ended up with all sorts of veggies in including the left over broccoli 🥦 I bought for the stir fry….removed 2/3 from pot and gave it a whizz with Barmix …so it’s a nice texture smooth with a few bit of chicken from when I made the stock last week .

When we have what I call I light meal , I usually make a desert …so tonite it will be bread and butter pudding after our soup .

There are lots of recipes out there for bread and butter pudding, ….modern versions use lots of bread ….the ones I make more a baked custard with ….some bread ( I use fruit bread if I have any ) maybe I try to remember to take a photo of mine latter …I use a Ltr of milk 5 eggs and 4 slices of bread ( buttered ) and maybe spread with jam ( cut into inch squares ) sultanas ….brown sugar sprinkled on top of mix ..and nutmeg …

Where modern versions have bread completely covering the top of the pudding ..nah we like our old fashioned version more custard … ..less bread …

We make something called Boiled Bread Pudding. Its actually a bread that’s boiled on the stove
