What are you cooking or baking today?

No recipe, just refrig and pantry surprise.
Water, chicken broth, lasagna noodles, tomato sauce, tomato paste, enchilada sauce, whole head of spinach, garlic, onion, bell pepper, and mushrooms, then at the last, Mozzarella cheese. Served with a slice of toasted and buttered 3 cheese semolina bread.
Surprisingly enough, it wasn't too bad. Leftovers tomorrow.
 

Store bought tortellini and potato salad! I believe in eating healthy so I threw some browned butter over the tortillini and added four eggs to the potato salad! Don't imitate me, I am too old to be jeopardising the time I have left, so it's alright for me to ignore all the tips on how to stay young and healthy! One of my medications cuts down on the cholesterol, the other looks after my blood pressure! Life is good! :)
 
German potato salad from Once Upon a Chef. I get her emails. The other day I made her chickpea salad; so easy and tasty. She never fails when I try her recipes.

When shopping at Costco Business Center I usually pick up their 5 lb bag of shredded cabbage mix for $3.99. (I freeze about half of it and throw some in with stir fries, soups, and other cooked meals.) Luckily enough I was just there a couple of days ago and grabbed a bag. I've go everything on hand for the recipe with the exception of cilantro, but DH and/or I will dash out and grab some later this morning so I can make this today.

Headed out to get a bushel of peaches being trucked in from South Carolina. This company makes stops for several days all over the area & we have always gotten good fruit from them. I'll make a dessert from them first & then can/freeze the rest for the year. Made jam last year & still have enough until next. Prices are up because of a freeze they had back in March.
 
I made eggplant napoleons last night, left overs tonight.

I fried the eggplant and roasted sliced tomatoes.
Then layers went like this...eggplant, tomato, and sliced burrata cheese, topped w/homemade pesto. I made it (pesto) myself for the first time and it came out delicious.

Is it dinner time yet lol?
 
WE are having a late 7-4 get together starting at 5 till today all will be given something to bring 20-25 invited so far with a no guest rule today in force. WE will have brisket beef BBQ and we made Mexican Street Corn Dip as our thing to furnish so BBQ and dip here. With about half of our guests being non US born many dishes from other countries will be brought later for all to eat. We normally have the older folks inside where it is cooler and the young in our pool outside.
 
My evening meal was a can of Cullen Skink, purchased from Scotland.My Daughter gave me four cans for Christmas and I am saving them for special treats to myself.
Enjoy your special meal. It doesn’t seem like something I’d care for, so all the better it’s just for you, not that I was invited. 😉
 
Pearl couscous salad. First time making it and it was just a mix of different recipes. I saw a couple of good ones online. Without those items in the fridge, I wasn’t willing to purchase more ingredients. It wasn’t bad; it wasn’t great. Maybe the flavours will meld tomorrow.

Will likely make another quinoa or brown rice based salad today. Keeping ready-to-eat main courses in the fridge during hot weather is right up my alley.

When going through the motions anyway, I always make extra quinoa or brown rice in the instant pot, then freeze it in 1 cup portions. They defrost very quickly.
 
Tried a new recipe tonight, Bacon Cheeseburger Sloppy Joe. I think this one will go into the house cookbook. The only thing I substitued was beer for the beef broth. I didn't have 1/2 cup & didn't want to defrost my 2-cups in the freezer.

Lilac, I keep powdered broth mixes for cooking. I can just make the amount I need. Hope there was some of that beer left for you to drink; it would go well with your Sloppy Joes.
 
Last night I made a batch of my personal version of the "Jennifer Aniston Salad" that made the rounds a year or so ago (which she denies being sourced by her).

Such a great warm weather salad. I made it using quinoa this time around - sometimes use brown rice, sometimes a combo of the two, depending on my mood and what's handy.
 
Pressure cooked baby back ribs, then finish on the outdoor BBq with mesquite smoke. Potato salad & a cold soft drink to complete the feeling like were on a picnic.

I had a little beer left 😁. My local IGA carries little bottles of beer that are only 8 ounces. I have them stashed away just for cooking. They work out well.
